Recipe Ingredients for Basic Crepes
| 2 | egg whites |
| 1/4 | cup skim milk |
| 1/4 | cup water |
| 1 | tbsp margarine |
| 1/2 | cup flour |
| 1 | dash of salt |
Recipe Directions for Basic Crepes
- Slightly beat egg* whites with whisk, melt margarine*
- Mix with milk* and water
- Whisk in sifted flour and salt until smooth (don't use a fork, it never seems to get it smooth enough)
- Let sit for an hour (or less if you're impatient)
- Lightly grease 8" frying pan, heated over medium-low heat
- Pour up to 1/4 cup batter into pan, quickly turning until bottom is coated
- Cook until top is dry and bottom is lightly golden, about a minute or two
- Flip, cook for another minute, until other side is done
- Remove from pan
- Serve hot with fruit or syrup or just eat it plain
- *For vegan crepes, use egg replacers, vegan butter/margarine, and soy milk
