| 2 | tsp olive oil |
| 1 | medium onion, chopped |
| 1 | clove of garlic, crushed |
| 28 | oz diced tomatoes |
| 2 | tsp tomato paste |
| 1/4 | tsp dried oregano |
- Heat oil in a medium saucepan over medium heat. Once hot, add onion and sautee 3 minutes until soft. Toss in garlic and cook 2 more minutes.
- Stir in tomatoes (with juice), tomato paste and oregano. Simmer, uncovered, for about 25 minutes.
