look for some bean salad recipes..any suggestions?

I love this salad...

Pepperoncini, Feta and Barley Salad (with beans too Laughing)

1 1/2 cups water

2/3 cups uncooked quick-cook barley (you can use normal barley too it just takes longer to cook)

1 cup (4oz) feta cheese: sundried tomatoe and basil is good if you can find it

1 cup halved grape or cherry tomatoes

1/2 cup chopped pepperoncini peppers

1/2 cup chopped bottled roasted red peppers

2 Tbsp chopped fresh basil ( or to taste)

1 Tbsp cidar vinigar

1 Tbsp extra virgin olive oil

1/2 tsp minced garlic ( or to taste)

1 (16oz) can navy beans, drained and rinsed

 

Boil the water..cook the barley until cooked (about 10-18mins). Rinse under cold water and drain well.

Combine everything together in a large bowl and toss well.

It makes 4 servings....each with about 317 cals ( depending on the amounts of cals in the brands you buy)

I like to take a whole wheat pita, cut it in half and stuff the pockets with the salad.  It's very fresh!!! Hope you enjoy it!

I made a bean salad that I took to work over the holiday.  Hope you like it...

1 can each pinto, chick pea, and black beans - drained and rinsed
1/2 an onion - chopped
1/2 of a jar of green olives - chopped
jalapenos to taste - chopped
light balsamic vinaigrette dressing to taste - maybe 1/4 cup?

Just mix everything together and refrigerate overnight.  Serve cold.

Yummy and good for you... enjoy!
