Does anyone know if there is any actual nutritional value to bean sprouts? Before I moved to Korea, I don't think I ever ate more than, say, four, in one sitting (probably in Chinese take-out).
Well, in Korea bean sprouts are king. They're in everything. I swear I ate no less than two cups of them today.
They're obviously not bad for me, but are they good for anything? Or are they just the Asian equivalent of iceberg lettuce?

3/4 c (85g) is 30 calories, 1 gram fiber and 3 grams protein, i have a bag in the fridge from wheni made Pho a few days ago :D, the bag didnt say if they have any other nutrients in them.

Sprouted beans or seeds are actually a nutritional powerhouse. When you think about it, the nutrients and energy required for a shoot of living green to burst from a dry old seed is quite something. You're essentially getting the goodness of an entire plant in one shoot.... Protein, antioxidants, minerals, vitamins - all concentrated in one little scrap. A shoot has 400 times more protein than the same amount of lettuce

I think iceberg lettuce gets a bad rap - it's filling bulk and low calorie - for protein, you can eat chicken breast - I think the iceberg lettuce is partly why Subway sandwiches are so effective at weight loss.
Sprouted raw sunflowers are tasty and packed with good nutrients.
