Recipe Ingredients for beef and barley soup
| 1 | c. chopped onion |
| 1 | c. chopped celery |
| 2 | c. chopped mushroom |
| 1/2 | c. yellow & red peppers chopped |
| 1 | ? 16 oz. can diced tomatoes |
| 2 | ? 16 oz. cans beef broth |
| 1 | ? 16 oz. can vegetable broth |
| 2 | bay leaves |
| 1 | T. dried basil |
| 3/4 | c. barley |
| 1 | salt & pepper |
| 1 | lb. leftover steak or beef roast or *raw round steak |
Recipe Directions for beef and barley soup
Sauté onion, celery and mushrooms in Smart Balance and olive oil. Salt & pepper. Cut up leftover steak or beef ? add to vegetables and sauté for just a few minutes. Add in tomatoes with the liquid and broths. Next add bay leaves and half the basil crushed between your palms and half uncrushed. Bring to a boil, add barley, lower heat and simmer. Cover and simmer 40 ? 50 minutes until barely is cooked. Remove bay leaves before serving.
