what with beets? are they considered a "starchy" veggie like potatoes? are they healthy?

Beets are very healthy, full of vitamins and minerals, their not as starchy as youd think, lower calories than carrots, great in just about anything. I cook mine with some green pepper and cumin for a curry like side dish

ugh! my mom used to feed us beets w/ dinner on a regular basis and i can't tell you how much i hate them! i used to feel the same way about brussel sprouts, but as an adult i've had them made in yummy recipes and found they are not so bad anymore.
i'm open to trying new things so if you have an amazing beet recipe i'll give them one more try........

If you have a juicer, beets make an awesome addition to fruit juice. I was extremely skeptical the first time I heard that one, as I'm not necessarily a beet lover. But I tried it and it rocks! A really good juice recipe is beets, apple, carrot, parsley, and fresh ginger. Take it easy on the ginger, though. Sounds gross to most people, but it's sweet and refreshing and awesome.

Elbow I'm with you on this one --- pickled beets rock.
I just posted an awesome pickled beets recipe here for those of you who like them. You can reduce the sugar and salt a bit if you like, but everyone who I have given them to absolutely loves them. Even a guy I know who stated (and I quote) " I don't like pickled beets because they taste like dirt!" was converted. makes 3-4 quart sized jars, but I suppose you could cut it down more to make less. Serving size is arbitrary... I had to put something in.
