Beginner's help!

OK so i've always been active until about a year ago, I played softball for 5 years and worked retail in the meantime where I was always on my feet.  After graduating school and getting a desk job I've literally been on my a** for a year and it's showing big time.  Going from 118lbs to 160lbs in that amount of time is devastating.  I had my doctor test me last month for my thyroid and it's not that so she suggested counting my calories.  I'm like huh? What are those? I've NEVER had to worry about things like this my entire life.  I've always eaten whatever I want whenever I want... the all-american diet of fast food, soda, chips, candy, you name it and I would never have to worry about it.

It's a different story now.  I'm very concerned for my health and I'm looking for some guidance from someone who has had similar experience as myself.  I've never been into gourmet cooking and I need fast simple recipes that I can learn and teach my boyfriend how to make for both of us, since he cooks alot of the time.  As opposed to the go-to hamburger/hot dog meals.  I need recipes with minimal ingredients that are easy and inexpensive to pick up at a normal grocery store.

My doctor said that with sedentary activity and my age and weight that I should be intaking 1500 calories.  I've really been working hard to cut my calories down gradually and I think i'm getting there, but any suggestions you may have would be greatly appreciated.

Check out this website: www.eatingwell.com .  It has lots of recipes you can chose from and give you portion size and calorie counts.
