'Bella Asada Fajitas

Strips of meaty portabella mushrooms stand in for standard steak in these fajitas. And the quickie guac is the perfect topper!
Ingredients:
1 tsp. olive oil
2 large portabella mushroom caps, sliced
3/4 cup sliced bell pepper
3/4 cup sliced onion
1/4 tsp. garlic powder
1/4 tsp. salt
1/8 tsp. chili powder, or more to taste
1/8 tsp. ground cumin
Dash black pepper
1/2 cup chopped tomatoes
1/4 cup roughly mashed avocado
2 tbsp. chopped fresh cilantro
1/2 tbsp. lime juice
Six 6-inch corn tortillas
Directions:
Drizzle a large skillet with oil and bring to medium-high heat. Add mushrooms, bell pepper, and onion, and sprinkle with garlic powder, 1/8 tsp. salt, chili powder, cumin, and black pepper. Cook and stir until veggies are tender, about 6 minutes.
In a small bowl, mix tomatoes, avocado, cilantro, lime juice, and remaining 1/8 tsp. salt.
Microwave tortillas on a microwave-safe plate for 15 seconds, or until warm.
Top each tortilla with about 1/2 cup fajita veggies and a spoonful of the tomato-avocado mixture. Fold and chew!
Makes 2 servings
1/2 of recipe (3 fajitas): 275 calories, 8g fat, 312mg sodium, 47g carbs, 8.5g fiber, 7.5g sugars, 7g protein

Yum! This sounds really good! Am going to try it Saturday (grocery day). There isn't an ingredient in this that I don't like! I wonder if I can replace the corn tortillas with flour tortillas...I prefer flour but they might have a higher calorie count? Or maybe the whole wheat tortillas. Hmmm.
Sadly, the flour tortillas have almost 2x the calories as the corn tortillas. So, you could sub, but for the same calorie content, you'd probably only get 1 fajita (of course, it will be a bigger one, too!)
This recipe looks good and I can't wait to try it!
My tortilla of choice is LaTortilla Factory Low Carb whole wheat. One tortilla is only 50 calories. They are a nice size too.
I will be making this recipe with these tortillas.

Go for a low carb tortilla. They taste close to flour.
I'm going to try it in an 80 calorie pita pocket or those 50 calorie LaTortilla Factory Low Carb whole wheat tortillas sound good. I'd like to find a low cal. Tortilla that actually holds together. Nothing more annoying then having your tortillias fall apart!
