Best Frosting For Experimental Cake...?
I am baking a "S'more Cake" tomorrow, partly for my mom. I am going to be using graham cracker crumbs as a base, then chocolate cake mix (lowest-cal, healthiest I could find) for the actual cake. I had planned on using marshmallow frosting but couldn't find any so I got stuff to test out. However, vanilla frosting, marshmallow creme, etc. seems rather rich and I'm sure it is pretty unhealthy.
What would be a good alternative that would still make the cake seem s'more-like? I was thinking maybe using some low-fat or low-sugar/-cal whipped cream?

I think it's a huge shame to compromise the flavour and texture of a cake by spoiling it with low-fat this and low-sugar that. Cakes exist solely for pleasure .... never were and never will be health food. Make your cake the most fabulous full-fat, full-sugar creation it deserves to be and keep the calories down by enjoying it in very small slices!!!

X2...............no point going to all that work and have a product that wouldn't have a chance of tasting as good in comparison......I also include any pre-made icings. Make the full fat version and enjoy the small piece your likely to have.

I think some people enjoy cool whip - plain, or mixed with pudding - as frosting. Not sure if that helps!
Sweet n' low makes a box mix of vanilla frosting. It's lower in fat and calories than regular frosting, so you could mix that with the marshmallow creme.
I have to say though, I DROOL at the thought of a s'mores cake!!
This is your mother we're taking about here. right? Unless it's her diet, or preference to have a cake made from (shutter....) sweet n' low mix or diet frosting, I'd really encourage you to go for the richest most fantastic recipes you can find.

This sounds yummy! I like whipped cream frostings, because I can use sugar free coffee syrups to flavor them (which toasted marshmallow is my favorite!) If you put a 1/2 teaspoon of gelatin in 2 tablespoons of water and microwave it for until it disolves (like 30 sec.) when it cools a little you can put the mixture in you cream and it will stablize it (like the stores make--sorry I don't have the exact recipe.) I am not sure what the exchange is calorie for calorie, but this would be not as rich and would still taste good.
Whipped cream is the easiest (if you have an electric beater!) and can be really flavorful. Put 1.5 cups of heavy cream in a deep mixing bowl and start whipping. Once it thickens a bit you can add vanilla, cocoa, coffee, strawberries, blueberries, etc, a little at a time. Don't over beat or it becomes butter! Such a delicious and easy way to get a wonderful taste treat. I could write poems about whipped cream ![]()
I believe Pillsbury sells a ready made frosting in a can which is made with 50% less sugar. Its not fat free or anything but its at least a bit better than the real stuff
i really like mascarpone cheese and whip cream (fat free) mixed together. Mascarpone cheese is NOT fat free, but it's your mom soooooo oh well! Besides, the whip cream being fat free and only 8 cal per tbsp is not bad.
This is my guilty pleasure: angle food cake, 1 tbsp of mascarpone cheese, 2 tblsp of fat free whip cream, blue berries, strawberries halves. Yum! only 221 calories total! And worth every bite!
