BEST healthy pancakes EVER!
Okay, so I've really gotten into the habit of eating my own "power oatmeal" for breakfast every morning (and don't get me wrong - it never gets old) but recently I was thinking; I wonder if I can transform this into pancakes. Well, I did some testing, and I was able to incorporate EVERYTHING from my bowl of oats into my pancakes, along with some skim (or soy) milk and either egg whites or extra flaxseed (as an egg replacer). I'm a big clean-eating advocate, and I like to work out and lift weights, so this recipe is perfect since it's so full of protein and fiber. I sometimes add a tablespoon or two of brown rice protein or VEGA as well, but that's completely optional. Here's the recipe in case you want to try it out!
Power Oatmeal Pancakes - no cottage cheese and whey required. ^^
- 1/2 cup whole rolled oats
- 1 tbsp milled flaxseed
- 2 tbsp wheat germ
- 1/4 cup wheat bran
- 1 tsp no-sodium baking powder
- pinch of salt - or 1/16 to 1/8 tsp
- 1/2 cup or skim milk or nondairy alternative
- 2 large egg whites, 1 whole egg, or egg replacer equal to one egg
Optional add-ins -
- 2 tbsp favorite protein powder
- 2 tbsp VEGA meal replacement formula
- 1-2 tsp maple syrup, honey, or agave (for sweetness and flavor)
- 1/2-1 tsp cinnamon or favorite spice blend
- 1/4 cup canned pumpkin (may need to cut out egg whites)
- 2 tbsp chopped nuts
- 2 tbsp dried fruit
- 2 tbsp shredded dried coconut (unsweetened)
- 1/2 cup blueberries or blackberries
- 2 tbsp carob chips
- 1/2 cup finely diced apple or pear
- Pre-heat NON-STICK skillet over medium to medium-low heat.
- Mix together all dry ingredients in a small bowl. I using, add in your nuts or coconut at this time as well.
- Separate egg whites from yolks and whisk until slightly frothy.
- Add milk and sweetner and pumpkin (if using) to egg whites and whisk to combine.
- Make a well in the center of the dry ingredients and add the milk mixture.
- Mix until well incorporated and pour desired amount onto preheated skillet.
- When poured, sprinkle on fruit or carob chips, if using.
- Cook until golden brown on both sides and done in the center.
- Serve warm with fresh berries and almond butter and enjoy!

I LOVE PANCAKES, and i'm always up and ready for a new pancake recipe. :)
I've discovered Fiber One Pancake Mix, and think it is great! Just add 1/3 c water to 1/2 c mix, and it makes 3 good sized pancakes in about 2 minutes. All for 180 calories! Top with 1/4 c. sugar-free syrup @ 30 calories and you have a healthy, filling breakfast for only 210 calories. Can't beat that! Add some fruit or a yogurt and you still have a low-cal breakfast. This is a wonderful product you should try.
For now this has replaced my daily steel-cut oatmeal breakfast I make in the crock-pot. Either one, healthy and filling.
they sound awesome and same I love working out as well and yep the protein is great... will deffs try them!!!! :)
here is another really healthy high protein, low Gi pancake recipe which i love... even sometimes over my oatmeal!!! hehe
Ingredients (Serves 2/Approx 14 thin pancakes)
½ cup/45g soy flour
¼ cup/50g ground almonds
½ cup/60g whole grain flour
3 tablespoons milk powder
1 teaspoon baking powder small pinch salt
3 egg whites
¾ cup/180ml skimmed milk or water etc
1 cup/125g raspberries &nbs p; & nbsp;
1 Sive the dry ingredients into a mixing bowl. If preparing the mixture in advance then leave out the baking powder and add it just before cooking. Add the egg whites one at a time separating by allowing it to fall whilst passing the yoke between the shell halves.
2 Mix the eggs and flour together then add a third of the milk. Mix that in well before adding another third and mixing further. Finally add the remaining milk and the vanilla extract and mix to a smooth paste.
3 Spray a frying pan with a thin layer of olive oil and spoon small amounts of the mixture into the pan to form pancakes. Cook for about 30 seconds on each side or until brown.

I seem to be doing good with this blended mixture for now.
1 large egg
1/4 cup egg whites
1/4 cottage cheese
1/4 oats
a bit of baking powder
one large strawberry or a few small slices of banana
Those sound really good! I LOVE the Fiber One pancake mix. I bought it a couple days ago and tried to make the pancakes based on the instructions (2/3 c. water) and they were WAYYY too runny and I threw them out. I tried again today with 1/3 c. water (like the above person suggested) and they were perfect and fluffy and yummy! I put a little butter substitute and some sugar free grape jam and they were delish! Too bad I topped them off with a slice of pepperoni pizza.
All sounds so good. I LOVE pancakes. I make mine with Buckwheat pancake mix, water and one egg white. I use Mrs. Butterworths sugar free syrup, Smucker's sugar free strawberry topping or flavored apple sauce 50 calorie cups. I love the peach and Pomeranian. Also strawberries or peaches on top.
The pancakes I make are really close to yours! Deliciously amazing. I'm starting to play around with pumpkin, cinnamon, and pumpkin pie spice as the holiday season comes into play. mmm I'm making pancakes in the morning. I want to see if I can't find some honey flavored whey to boost up protein content.
PS: Flour pancakes, or even the fiber one pancakes leave me starving after. These pumpkin ones are more dense and full of protein + carbs which really help keep you full longer.
