Recipe Ingredients for The Best Ratatoulle

2 large onions
2 tbls olive oil
1 green pepper
1 red pepper
3 cloves garlic
12 oz canned tomatoes
1 zucchini
1/2 tsp thyme
1/2 tsp oregano
2 tsp basil
1/4 tsp salt
1/4 tsp pepper

Recipe Directions for The Best Ratatoulle

  1. cut eggplant into cubes. Place cubes in colander sprinkle with salt and place plate on top. let drain 30 minutes.

  2. Heat oil on fryingpan. add onions, green and red peppers and saute. Add garlic and tomatoes.. Transfer to bowl.

  3. Saute zucchini and eggplant.

  4. Heat all in wok.
