Birthday Dessert
So, my family is celebrating my birthday this weekend. I told my mom I didn't really want to do anything for it, but she insisted. So, I'm trying my best to keep the menu reasonable. I requested grilled meat, and corn. I also told her I would provide her with a dessert recipe to use. She's a very good cook, just not that health conscious.
I've looked in the forums, cookinglight.com, and hungry girl.com. There's a lot of options, but nothing is really inspiring me.
I generally like fruity desserts and my husband detests chocolate. I think my favorite dessert is a tart with custard and fruit on top. It should probably be something that a birthday candle can be put in, and doesn't include many "diet" ingredients (no Splenda, etc).
Does anyone have any ideas?
Good timing! It was my mom's birthday last night, so I made her her birthday "cake," which was actually a pie I guess. It's called Summer Jewel Pie, and it's basically a crust type thing, filled with berries/fruit (I had to modify the recipe a bit, based on what I had available, so I did: raspberries, blackberries, strawberries, bananas and honedew..the original recipe calls for raspberries, blueberries, peaches, banans and strawberries, I think)... The fruit is all cut up, and mixed in this orange glaze stuff. Pretty darn easy to make, but very good! I stuck it into the recipe analyzer here, and it ended up being ~190calories for 1/8 of a 9" pie... It really doesn't hold well together once it's cut, so of course we just finished it all, meaning I ate 1/4 of it (hehehehe) but not bad, at all!
Anyway, if you're interested, I could type up the recipe for you...? It's not custard tart, but it's definately a good, summery fruit pie/tart thing... (and no chocolate or spenda ;) )

Do you like cheesecake? You could make a lighter version
I like to bake a smaller cake then top it with fresh fruit that is mixed in a glaze. It could be lemon or strawberry.( Or any flavor you like)
I like to make a layer desert in a clear bowl. You can use any kind of cake. You break up in the bowl and then add fruit, frozen yogurt, and Dream Whip. I use Dream Whip because it is low in sugar. I add the yogurt right before serving it.

oh, wow, it is! I tried looking it up online (in about 5 seconds, mind you... i didn't try too hard haha) but didn't see it... anyway, yeah, that looks just like it! i highly recommend it. I've made it twice, and altered it slightly both times depending on what fruit i had, but yeah..good stuff! :)

It IS really good! Both times I made it though, there was almost too much; I sort of "drained" it as I actually put the fruit on, and there was still excess but oh well. :) Good luck, happy birthday, and I hope you love it, too!
You could make individual "bionicos". They are latin type parfaits. You make them with fresh apples, pineapple, strawberries, and bananas. I only make it with strawberries and bananas, though. YOu put the fresh fruit in a cup(layer it to look pretty) and you top it with a heavy cream and condensed milk mixture. (You just beat it together until it is thicker than usual, but not whipped topping) Then you top it with a little dried coconut, a little lite granola, and some raisins.
The good thing about individuals is that each person can decide how much of the cream, coconut, and granola they want. You can make it as healthy or as unhealthy as you want depending on how much cream you use. I swear they are so good! You could even have your mom make a small cake and have these as a second option.
Pumpkin Pie Pudding:
1 pack of sugar free vanilla jell-o
2 cups cold skim milk or milk substitute (I used a substitute personally, and it didn't effect the taste or consistincy)
1 cup canned pumpkin
1/2 tsp cinnamon
Just mix all of the above together, add a dash of Ready Whip Fat-Free (5 cals per tbsp) and it's all done!
Each 1/2 cup serving without whipped cream is (with fat-free milk) 61 calories.
One of my personal favorites... tastes exactly like pumpkin pie, but no crust; no guilt!

Woah I have to say.. this sounds... amazing! Do you eat it cold, though? I'd be tempted to at least zap it in the microwave, I think...? I dunno. Although I avoid pudding mix (I try to stay away from processed stuff, and I sort of classify myself as a "bad vegan," so I don't drink milk and don't really like having any milk products buuuuut I do make exceptions and try not to worry too much about "contains milk ingredients" or whatever haha), HOWEVER!! I might just have to try it...!! :-D
