Black Bean and Coconut Pudding Recipe

This treat is between a pudding and a stew. I think it was originally Thai, but I'm not sure.

Ingredients
3 cup Beans, Black Turtle Soup, Mature Seeds - Cooked, Boiled, Without Salt
3/4 cup sugar
13 1/2 oz. Coconut Milk, Canned (Liquid Expressed From Grated Meat And Water)
1/2 teaspoon salt
Directions
  1. To get three cups of cooked beans I soaked and boiled 1 cup of dried frijoles negros - a small black turtle type bean.

  2. Bring sugar, coconut milk, and salt to a boil over medium high heat until mixture begins to thicken, stirring.

  3. Add rinsed beans, and cook at a high simmer/low boil for at least 5 minutes.

  4. Cool, and serve.

  5. I think the actual serving weight is smaller then the one listed, due to reduction of liquids.
