Black Bean Soup Recipe

Makes 8 servings


Super easy black bean soup. Takes six minutes in the pressure cooker. 194 calories per serving. I use a low fat chicken broth, but the recipe analyzer doesn't understand low fat.

Ingredients
2 cups black beans, soaked overnight
4 cups chicken broth, low sodium
2 tomatoes,diced
2 garlic cloves, minced
1/4 cup salsa
Directions
  1. Soak the beans overnight. (1 cup of dried beans makes 2 cups of cooked beans.)

  2. Add all ingredients into pressure cooker EXCEPT salsa.

  3. Bring to full pressure, then cook for six minutes.

  4. Cool enough to open pressure cooker, then open lid.

  5. Add salsa.

  6. Puree.

  7. Yes, you can make this without a pressure cooker. It takes about 45 minutes in a pot on the stove or 8 hours in a crock pot on low.
