Black Beans & Rice Recipe

Makes 4 servings


From allrecipes.com. Add some tabasco or hot pepper sauce on top for flavor.

Ingredients
1 tablespoon vegetable oil
1 onion, chopped
15 ounce black beans, undrained
14 .5 ounce) can stewed tomatoes
1 teaspoon dried oregano
2 cloves garlic, minced
1 cup uncooked instant brown rice
Directions
In large saucepan, heat oil over medium-high. Add onion, cook and stir until tender. Add beans, tomatoes, oregano and garlic powder. Bring to a boil; stir in rice. Cover; reduce heat and simmer 5 minutes. Remove from heat; let stand 5 minutes before serving.
