Easy nutritious waffle or pancake batter made in the blender

Recipe Ingredients for Blender Batter Waffles by Sue Gregg

1 cup light soy milk
1 T olive oil
1 t vanilla extract
1 c brown rice
1/4 c egg beaters
1 T flax seeds
1/4 t baking soda
1/2 t salt
1 t baking powder

Recipe Directions for Blender Batter Waffles by Sue Gregg

  1. Place first 4 ingredients in blender, and blend at highest speed for 3 minutes, while adding enough liquid to maintain a vortex.

  2. Cover blender and allow to stand at room temperature over night for improved nutrition.

  3. Preheat griddle/waffle iron on meduim-high

  4. Just before baking, add and reblend for 1-3 minutes, the baking soda, salt and baking powder and egg beaters.

  5. Spray waffle iron with nonstick cooking spray.

  6. Bake in waffle iron for 4 minutes, unitl crisp on the outside.
