I don't know if anyon'e posted this yet, but last night I whipped this up:

2 tbsp Weight Watcher's Whipped Cream Cheese

3 Splenda Packets

1/2 cup bluberries

Directions: Pour Splenda and Cream Cheese into small bowl and microwave for 5-10 seconds.  Stir really well to fluff it up a little.  Place in Freezer for 5-10mins to cool.  Add Blueberries, and enjoy!

 

The hot cream cheese smell is a bit noxious, but this was SO YUMMY!  Next time I think I'll try a little less cream cheese, more blueberries, but I am looking forward to making this a regular dessert.  :)

I bet you could subsitute a bit of low fat or fat free ricotta cheese for the cream cheese; plus, it's softer, so you wouldn't have to nuke it. :)

Liz-usa<- poor intern.  So, no ricotta cheese any time soon.

I used the cream cheese b/c I bought it for celery and then figured out that I really don't like celery.  ^^;  So, I wasn't using it, and it felt wasteful to just have it sit there.

Do you think using cottage cheese would have a similar taste?
Maybe if it was tossed into a blender before hand to get rid of the chunks?

Mmmm, yep, I had cottage cheese and blueberries for breakfast, 'smatter of fact.  Yummers.
