For example, can I boil turkey bacon to lower the sodium?

It is better to buy low sodium processed meats because meat loses only a negligible amount of sodium in boiling.  When boiled in clear water, vegetables lose about 20% of their sodium, but they lose other nutrients as well.  To boil away the most salt, use a lot of water, cook a long time and change the water mid-way.
