Hey all - I am going to make chicken breasts tonight - but I am short on time (wont get home till 530, and still have to do a 45 minute workout)...
Any ideas for something tasty and EASY???

Tonight I am taking chicken breasts putting them in a cake pan adding some raw rice, mushrooms, onions and covering it with 98% FF Cream of Chicken Soup. It turns out really good. AND it takes 45 minutes to cook. :)
That sounds good - I could throw together and put in the oven and then workout!

Cover it with tin foil too otherwise it gets dried out. I forgot - depending on the amount of rice you also need to add milk - I usually add 2 cups milk to 1 cup rice.

Gotcha - I am thinking of using FF chicken broth instead of milk, and FF cream of chicken soup - Hubby hates cream of ANYTHING if it has shrooms in it...

I'm pan roasting some chicken and putting it in to a hot dish with a red sauce and some mozzarella.
But easy and tasty. If you have roast sesame oil and a caste iron pan you can make thawed raw chicken into an almost pork like roast chicken in no time.
Heat the caste iron pan in the oven to 450. Salt and pepper the chicken (you can also use dried herbs like poultry seasoning or Italian seasoning or dried garlic) and spray quickly with Pam.
Heat an stove burner to high (ok I like electric stoves) and put the fry pan on to it and add 1 tsp of sesame oil per breast max 3 tsp.
Brown chicken, about two minutes, flip and brown other side and return to hot oven.
Flip chicken once at about 10 to 15 minutes cook to 170.
The chicken will almost taste like pork/bacon will only 40 calories extra.

chocorific, you can do about the same thig with a pessure cooker. Great for grains with meat or quick stews.
You add milk to rice? I never heard of that. What does it taste like?
If you have a slow cooker, you might want to do a google for slow cooker recipes for chicken. Just set it in there before work, let set for 7-8 hours (on average), then while you've been working and doing your exercises, your dinner has been cooking. And you didn't have to do much work to make dinner.
I put chicken breasts in a deep skillet, searing on each side, then add a can of chicken broth, a cup of brown rice and a liberal amount of garam marsala (indian spice like curry) Put a cover on it and cook for about 25 minutes - its great!
Microwave some frozen broccoli, make a side salad - you're done!

I boiled a boneless chicken breast, which makes it easy to pull apart. I pulled it apart and put it in a skillet with some cooking spray. Then added some salt, pepper, Buck Salt, and different seasonings. After that I added some Frank's Red Hot sauce. It is so good!
Frank's Red Hot sauce is a cayenne pepper sauce which is supposed to help supress appetite and is a fat burner.
With that chicken I actually made a personal chicken wing calzone.
The sauce is two tbsp of fat free ranch dressing mixed with some more Frank's Red Hot sauce. I spreaded that on a low calorie whole wheat wrap. Then added the flavored chicken, some light cheese, and a little more hot sauce.
You fold it in half like a calzone, and bake it at 350
I ended up baking it for like 4-5 min.

You can grill/fry/broil the chicken, cut it up, put some lite sour cream, guacamole, brown rice and black beans in a tortilla shell, and you have an instant mexican style lunch. I do that for dinner sometimes.

Another option is to slice the breasts into small pieces, cook in a pan with a little EVOO, then drain and add salsa and sliced red and yellow peppers. Let simmer for 15 minutes then serve over rice. Yummy stuff!!
