All I've been having for lunches lately is turkey or soy bologna sandwiches with soy cheese and fruit. I'm so bored with it. I don't really like things that have to be reheated though both because the microwave makes things taste funny to me, and also because I often eat lunch on the bus or at the bus stop. And I need stuff that's easy to make the night before. I have such a hard time with recipes because they all make huge amounts and then I get sick of whatever it is before it's gone, or it goes bad.
Any ideas?
If you like fish you could try a whole wheat tortilla with a handfull of premixed baby salad greens and some canned tuna, salmon or sardines all rolled into an easy to handle wrap. If you are a fish eater you may have something leftover you could use in a wrap.
Or nix the fish and make a salad in a wrap with premixed salad to which you can add whichever of the following tickle your fancy; nuts, cheese, fruit, seeds, meat or poultry bits, goji berries, cucumber and tomato slices, pickles, etc. and a little balsamic dressing or other low cal/fat dressing of your choice.
EDIT: A local restaurant makes a burger without the bun, everything is wrapped first in lettuce leaves then in a paper cover for holding in your hand. A chicken, turkey or fish "burger" could work.
I'm lactose intolerant. Soy cheese is fine. I mean I like it. I've heard that too about people who eat the same thing, but it's getting to where I don't even want to eat it, and there's too much fast food nearby for me to be taking lunches I don't want to eat.
My current favorite filling lunch is:
3 oz. chunk white chicken (or flake tuna, but I don't like tuna) on 2 slices of very thin whole wheat bread mixed with 1 tbsp. light miracle whip; 2 cups salad w/1 tbsp. light italian dressing. I toast the bread for more interesting texture.
It is easy to pack in the morning with some various tupperware containers; it prepares/packs easily and quickly.
Not sure if the Miracle Whip will work with the lactose intolerant, sorry:( I just re-read and saw that...
I'm sure I can use the Kraft fat free mayo. I use that regularly and don't have any problems with it.
as someone who eats on the go all the time I can sympathize. when I'm tired of sandwiches I usually make a salad in tupperware container, I get those mixed greens bags at the store and add some nuts or sunflower seeds, tomatoes, sliced apple, grapes and whatever else you like on salad. they also have precooked cold chicken or turkey chunks next to the sandwich meat at the store if you want more protein. I usually put the dressing (usually a low fat vinaigrette) in a separate little tupperware so it doesn't get soggy and put it on when i'm ready to eat. if you've got a small lunch box you take anyways toss in a fork and your set. I also find taking a different fruit to have w/my sandwich each day helps to make things seem more varied..an orange one day..then an apple..some grapes..etc.
I also make chicken or tuna salad sandwiches like trnnbrn97 said above, but I like to add some halved grapes, pieces of celery, and some chopped red onion, and a little mustard too. but that's just personal taste. those are also good in wraps.
I thought of one more thing..I'll make a mango salsa (diced mango, red onion, cilantro, fine chopped jalepeno (leave out if you don't like spicy) a pinch of cumin & red pepper(leave out if you don't like) & dash of lemon juice) and add some tuna (flaked) you can also put in avocado, but it tend to turn within a few hours of cutting it up so I don't unless I can add it just before eating. put it in a tupperware and take with :) (it's really good w/some yellow corn tortilla chips too (old dutch a relatively healthy chip :)
