Try some Wild Rice Quesedillas (Makes 3 Servings)-

360 cal. 15g fat (8 sat fat) 41g carb, 3 gr fiber, 16g protien

1 1/2 Cups wild rice (or use a mix like Uncle Bens)

1 Cup Mexican Blend Cheese

3 TBS Salsa

1 Cup Chopped Peppers (or assorted veggies)

Cilantro

 4 Tortialls

Cook the Wild rice then mix with Cheese, Salsa, and Cilantro.  Spred the mix over the tortialls, top with 1/2 the veggies, top with another tortilla.  Cook over medium.

Very Yummy

what is it you cook now, that you are tired of?  Are there any ethnic flavors you especially like?  More information please!

Whenever vegetarians/vegans are having trouble finding things to eat I advise them to check out www.vegweb.com
Amazing site.

I love this one:

Rutabaga casserole

Preparation time: 25 - 30 minutes
Boiling time for the rutabagas: 30 - 40 minutes
Cooking time 1/2 - 2 hours
Oven temperature: 350°F (175°C)
Suitable for freezing

2 large rutabagas, 3 1/2 lb. (about 1 1/2 kg)
1 1/2 cups (4 dl) cream or mixture of cream and milk
3/4 cup (2 dl) dried breadcrumbs
1/3 cup (1 dl ) dark syrup
1 egg
1 1/2 teaspoon ground ginger
1/2 teaspoon white pepper
1/2 teaspoon grated nutmeg
1 tablespoon salt
Coating: dried breadcrumbs, butter

1. Scrub and peel the rutabagas. Cut up into large pieces and boil in slightly salted water until soft.
2. Strain, keep the cooking liquid, and mash or blend the rutabagas in a kitchen blender.
3. Mix in the cream and dried breadcrumb paste, dark syrup, beaten egg and spices, and as much of the cooking liquid as is needed to give a loose soft consistency.
4. Turn into a greased baking dish, press the surface with a fork to make a pattern, sprinkle over a thin coating of dried breadcrumbs.
5. Dot the top with butter and bake in the oven.

-Eat this instead of mashed potato on side of of vegetable burger patty (no bun).

srry for the lack of info!

so now i just do plain veggies or fruits with meat alternatives [boca, morningstar..ect] some meals i just grab an orange or a box of raisins and go to practice or rehearsal

i tried a veg chili but it wasnt spicy enuff for my liking

im basically up for anything

im very busy for a teenager [i dance, do marching band, and have 4 AP[college] courses]

also the serving size and approx. calorie count would be awesome

thanxKiss

The simplest chili ever is just a jar of salsa and a couple of cans of drained beans (or 3-4 cups home cooked beans).  All you do is simmer it until the flavors meld.  You can add chopped peppers and onions to it if you want it chunkier. Finish it off with a handful of chopped fresh cilantro.  Serve it with accompaniments of sliced jalapenos, chopped red onion, lime slices, and hot sauce.

Another way to deal with it is make a big batch of something you can serve cold.  This is my favorite

Pasta Primavera Salad

vegweb.com im addicted to it they have sooooo many recipes
ok i just realized someone already said that
Try some indian food!  This site has some great recipes.
I like doing veggie wraps.  LaTortilla Large Wrap runs 80 calories and then you can saute some red, green, yellow peppers, onions, and I add jalapenos to mine.  Saute them until the onions are slightly brown in a lite olive oil and the veggie run about 71 calories and then the olive oil is about 120 calories so makes for a light meal and it is great.  Put the veggies in a wrap and you can eat it cold or hot.

if you like garlic....

CALORIE COUNT: 50-95, depending on if u use olive oil, ghee (clarified butter), margine, etc. and how big of a portion u chop up.

Full Factor: SATISFIED :)

INGREDIENTS: FRESH FIRM VEGGIES+ SPICES TO TASTE

really simple, really quick, SUPER tasty, and includes many " superfoods."

Into a lightly buttered or extra virgin oliv oiled frying pan, skillet, or wok, add:

julienned fresh beets (and tear up the leaves ...they have a great salty taste), crush fresh garlic or add garlic paste, throw in some broccoli, chopped brussel sprouts, carrots, green beans (WHATEVER u want as long as it as fresh) add the greens last (the beet leaves or other greens u wanna add). add fresh cracked pepper to taste with sea salt. you can pretty much use any firm veggie here. although the more firm the more u wanna cook it....thats y i start with the beets. the antioxidant levels r thru the roof and i actually feel "high" after i eat this tasty concoction. if you're a SPICE lover like me, add Cayenne Pepper to heat things up. VERY lo-cal, moderate sodium, and nutritious enough for a days worth of eating healthy!! TAKES 5 min to prep and about 5 to cook :) it's so easy there's no right or wrong way to do it.

biggest loser lover-

YUMMY!! i love that u add jalepenos!! thanks for the recipe!

Uhh just noticed that there's a recipe for "super hot veggie chili" - why don't you try making that??

http://www.calorie-count.com/forums/post/5718 3.html

With chili, as long as you have enough time to make it one day, you can store/freeze it in portions and just heat up (or dont!) later that week...

I love making soups that I can grab n' go.  Sometimes I bake muffins/bread to go with it, too.  Usually I cook at least two portions (dinner / lunch hte following day) of everything.

For things that are fast/ easy I just cook pasta (small amount!) and a lot of veggies as a "sauce" (pan fry in small amount of oil / spray until tender).  Last night was zuchinni & a cut up tomato (with tofu).  A lot of the time it's eggplant (cause I love it).  Sometimes it gets me in a rut, but it's a good fall back cause you can just use whatever veggies you have.

But I don't know how well these things work w/ being a teen & living @ home (do your parents let you cook things all the time?)

Good luck, I'll try to think of a few more things that i looove that are easy....!!
