I bought salmon fillet a week ago and I don't know what to do with it

it is a small piece. less than half pound. I knew I was not going to eat it right away so I stored it in the freezer. how can I log it and cook it? I appreciate your inputs. Thanks.

By the way, for how long can you keep fish in the freezer without being worried about it?

Hi Safina,

I used to be a chef at a great seafood restaurant on the east coast and also a seafood restaurant at a great ski resort in Utah.  I would try to eat the fish as soon as possible, just because I hate freezing fish.  When you thaw it, make sure you do it in the refrigerator slowly.  Salmon has great flavor so I don't like to do too much to it.  I prefer to grill  mine with only salt, pepper and a drizzle of olive oil.  Place it on a hot grill skin side down, if it has skin, and cook until you can see on the side of the fish that it is getting cooked about half way up.  Flip the fish over and cook until it is flaky.  The best way to test if it is done is to push it in the center with your finger.  The flakes will seperate.  You will also see some white liquid coming out of it.  When I see the white I always pull it from the grill.  Salmon is best when still a little translucent inside, not fully cooked. 

If you don't have a grill, try some pinenuts, sundried tomatoe, parmesian cheese, and fresh basil chopped together to make a nice crumb topping.  Put it on the top of the fish in a baking pan and bake it until it is flaky as described above.  Very killer.

One of the simplest, and most delish ways to cook a low-fat meal with salmon is in a foil packet. Best of all, it only takes about 15 minutes! Just pre-heat the oven to 450, spray a piece of tin foil (about 12 X 18") with some no-cal non-stick spray, and place the salmon on the foil. I also put veggies in with the salmon (asparagus is great, but baby carrots and fresh beans work well, too.) Drizzle with lemon juice and black pepper. Fold the foil packet burrito-style, place on a baking sheet and bake until fish is opaque and flakes easily with a fork. Serve with whole grain rice or couscous!

I microwave steam cooked some salmon, removed the skin and refridgerated it. 

After it cooled, I then break off section to toss in a salad just like one might do with chicken breast.  Something about the unique flavor of salmon gave the salad a real punch - from the same piece of fish made 3 salads and now miss it, it was so good.
I just had some, pan fried it, with minced onion and thyme and lots of lime juice and drenched it in lime, on my plate.  It was sooo good.
I love them with their skin, plain baked. Really. I like to cook some veggies in the fat that drains out. I just throw in the oven until its no longer see thorough and the skin has gone tannish and then I turn over and grill the skin so its crispy. Its like pork cracking, but less gross! I like it with asparagus
I like to cook in oven in a foil pack with a drizzle of olive oil, fresh cracked black pepper and thin slices of lemon on top.  Then i eat it with red onion and tomato slices.  Or I cook it in oven with fresh basil, garlic and pepper and eat with a nice fresh spinach salad, or asparagus and brown rice.

By the way, if it smells a bit not too much, should I give it a try?
Depends what you mean by too much
Microwave is ok, but then the skin inst nice and the oils tend to seeap away, so I would suggest putting it on a bed of rinsed vegetables with some flavour, such as lemon and p epper, or soy sauce.
Defrost it first - put it in the fridge in the morning, cook it at dinner

I get lazy and often instead of steaming just plop it on a plate and micro.  Then again, Ive low standards LOL.  Plus some lazy when cooking and thats 3-4 minutes in micro. 

Do you really eat the skin?!?  I cant bring myself to even touch it.  I scoop the fish from it but then again I cant touch the outside of a fish anyway.  Thats probably hypocritical because Ive no problem with pork rinds but the salmon skin looks to close to the real thing and Id never dream you could actually eat it with scales and all.  Wow!

Actually, the scales have been removed from the skin.  I bet you've never gone fishing, have you?

I like the foil packet method best.  You can season with anything, but fresh herbs and a squeeze of lemon are wonderful.

My favorite quick and easy one is this.  Preheat oven to 400 degrees.  Put fillet (thawed) onto a baking sheet, salt and pepper it and drizzle with a 1/2 teaspoon of evoo.  Bake 5 minutes and eat.

After getting all of these great recipe suggestions, why would you ask/even want to just put it in the microwave with some water?

Yeah, eating teh skin only works if its good -crispy. I can see why you wouldnt want to eat it otherwise. Not the hard scales like plastic, thats gone, but the silvery skin. Its good, in fact some places just sell the skin roasted. I guess in theory its gross but people eat prok crackling and I eat kiwifruit skins! Just like peach skins.

I tried to find out if its good for you. The fat is good for you and most if it is right under the skin, so it cant be all that bad.

I love salmon.  I usually preheat my oven to 400 degrees and put it on a baking sheet.  Then I season it with parsley and cajun seasonings and put it in the oven for about 20 minutes or so (I check it at 15 minutes and go from there).  Then you just let it cool some and eat.  It is low in calorie and great with nice steamed veggies.  I have even roasted bell peppers alongside the salmon and it turns out for a great meal.

best way I have found is grilled.......with a little fennel seed (or tarragon or rosemary -they are all good !) over it after brushing it with ....very good....makes me want some, but I am going to settle for meatloaf tonight!

 

Thanks everyone. I appreciate your ideas. By the way, I put it in the fridge to thaw but I don't want eat it today. Can I put it in the freezer again? I know it is too much but instead of throwing the food away.
Eat it tomorrow-never refreeze food
as long as the fish is in the freezer and doesnt have freezer burn it should be fine. thaw it, and then mix in a small dish (big enough for your salmon) 2 tbsp of maple syrup 1/2 tsp of worcestershire sauce and mix that up, lay your salmon skin up in it an dlet it marinade , then throw it ona forman grill, you can also just grill the salmon and use the mixture as a topping with some crushed pecans on top. its delicious!!
