Recipe Ingredients for Boza

10 cups bulgur (size does not matter)
10 cups sugar
5 gallons water
2 teaspoons active dry yeast

Recipe Directions for Boza

  1. Preparation:

  2. 1. Put the grains in a big pot, pour in enough of the 5 gallons of water to cover the grains by a few inches. Soak the grains in the water overnight. Do not put the lid on.

  3. 2. The next day add the rest of the water and slowly cook until it is easy to mash the grains (the grains are soft and it looks like runny oatmeal.

  4. 3. Strain it through a fine colander by pressing hard and collect the thick juice. This will be your Boza. You can discard the pulp.

  5. 4. Add the sugar for the thick juice and stir well. It should be thinner than tomato paste, but not as juicy as tomato juice. If the blend is too thick, you can add more water.

  6. 5. Put the pot back on low heat and boil for about 3-4 minutes.

  7. 6. Cool down to about 120 F.

  8. 7. In a bowl, mix the yeast with warm water. When dissolved pitch into cooled Boza. Make sure to mix well. Cover with a double layer cheese cloth or a ktchen towel and leave it at room temperature until bubbles appear.

  9. 8. Serve chilled. Sprinkle with cinnamon on top and serve with dry roasted chickpeas (another Turkish/Middle Eastern snack).
