Recipe Ingredients for Braised Chicken with fruit
| 1/2 | t extra-virgin olive oil |
| 1/2 | c chopped onion |
| 8 | oz pears |
| 1 | cup chicken broth |
| 1/8 | cup balsamic vinegar |
| 1 | tablespoon brown sugar |
| 2 | teaspoons cornstarch |
| 1/8 | cup raisins |
Recipe Directions for Braised Chicken with fruit
- Use boneless/skinless breasts and pound until 1/4" for even searing.
- Sear for 5 min each side in olive oil and remove from fry pan.
- Add onion (and any other veggies, such as celery) to fry pan with thinly sliced fruit (pears are best). Fry till fruit is soft to touch.
- In small bowl mix broth, vinegar, sugar and cornstarch. Heat till warm to touch in microwave.
- Add raisins to warm liquid and let stand.
- When veggies and fruit are almost done, put chicken back into fry pan and fry for another few minutes.
- Just before serving, add liquid to fry pan.
- When liquid has thickened, serve chicken and pour sauce with fruit on top.
