classic bran muffin recipe and almost no fat!
| 1/4 | cup unsweetened apple sauce |
| 1/3 | cup brown sugar, packed |
| 1/4 | cup maple syrup |
| 4 | egg whites |
| 1 | cup soy milk |
| 1 | cup all purpose flour |
| 1 1/2 | tsp baking powder |
| 1/2 | tsp baking soda |
| 3/4 | tsp salt |
| 1 1/2 | cups wheat bran |
- Mix applesauce and sugar together.
- Add maple syrup and eggs, and beat together well.
- Add soy milk and then bran.
- Combine flour, baking powder, soda and salt together.
- Add to liquid ingredients. You can also add additional ingredients (e.g., raisins or walnuts) at this point.
- Do not over mix!
- bake at 400 degrees for 18 to 20 minutes
