Breakfast blues

I've found an excellent 320 calorie breakfast that works well for me (1 cup Kashi cereal, 1/2 c nonfat yogurt, 1 c berries).

However, once summer break is over and I go back to work, I don't know if I'll have time to eat this breakfast. I'm usually quite hurried in the morning, and it takes 15 minutes for me to eat it (yes, I'm very slow in the morning!). Plus, I just don't like to eat until I've been awake for a while--so I don't know if I'll even want to eat the breakfast even if I have time before I leave for work.

So any thoughts for a healthy breakfast that can be eaten quickly or during my long commute? Or should I just break out the blender and make my regular breakfast into some kind of bizarre smoothie/puree?!

It really depends on what you like.  Something I do is make different kinds of breakfast wraps.  They are portable, something you can eat in the car or take with you to work.  For example, take a low-cal tortilla (I use a low-carb whole wheat one for 80 calories), and fill it with apple slices, fat-free cream cheese and cinnamon.  Or peanut butter and banana.  Or apples and peanut butter.  Or, just find a combination of things that works for you.  You can make these the night before, refrigerate them, and then warm them up on your way out the door or eat them cold.  Another thing you could do is put your Kashi and berries in a Ziploc bag and eat it in the car, just without the yogurt, kind of like a trail mix.  You could even add some nuts to bulk it up a little if you wanted.  Me, personally, I would just eat it with the yogurt while driving--but hell, I've changed clothes while driving before!  Not the best idea!
I have a terrible time eating in the morning before work. There are a couple of things that I do that really worked out well. When it was warm, I would freeze peeled bananas in zip-lock bags and buy frozen strawberries and blueberries. I put a cup of soymilk, a frozen banana, and a cup of strawberries and blueberries in the blender. MMMMM! It's really good :) The frozen banana and berries make it so you don't have to put ice in and the smoothie is thicker.

In the winter I made half a whole wheat english muffin, put smart balance and peanut butter on it and put it in a ziplock. That and water and a banana in a bag, and I could eat breakfast once I got to work during one of my prep periods.

Well if you freeze them in their skin, the peel turns brown in the freezer, and its really hard to get off when you take it out. So I peel mine and put them in individual ziplock bags.
Freezing them is great for smoothies, because they get mushed like crazy anyway, but it's not good for eating. When you freeze bananas, their cells rupture because water expands as it freezes. So when you thaw it, the banana is a sad, mushy mess of broken cells.
But like I said, it's awesome for smoothies, because you don't have to use extra ice and the smoothie is nice and thick. :)

aww but u can eat the frozen banana chips as is!

I love it! if you do this to a moderately ripe banana, its soo sweet and it my ice cream subsitute cut it doesnt melt in your mouth and it is a bit harder than icecream.
Thanks for all your great ideas. I can see how it will be important to prepare ahead, the night before.
haha to make it easier for omelets chop the pepper the night before and it seriously cuts down on preparation time for the next day.
or if you really have no time you can purchase Clif Bars.  They are good on calories, high protein and good fiber and are organic.  They come in a variety of flavors too.  Not great for everyday but for those days you really don't have time they are perfect.

When I used to commute, I would take an egg sandwich with me.  I'd scramble the egg and fold it into a square, wrap in saran wrap and put in the fridge overnight.  The next morning, I would throw two slices of bread in the toaster, microwave the egg and out the door I went.
