Breakfast Burrito 200 Calories Recipe

Makes 1 serving


This is fast and easy and best of all FILLING!! Reduce fat and cholesterol by using equivalent amount of egg substitute if you like.

Ingredients
1 large egg
1 tsp green pepper, diced
1 tsp onions, diced
1 tsp salsa
1/8 tsp mexican seasoning
1 6" tortilla, flour
1 oz fat free cheddar cheese, shredded
Directions
  1. Heat small skillet over med-high heat.

  2. Mix egg with mexican seasoning in bowl.

  3. Add onions, peppers and salsa to pan. Saute until translucent (1-2 minutes).

  4. Add egg mixture and scramble until set, stirring frequently.

  5. Sprinkle cheese over top of eggs and cover. Remove from heat. Let sit for 1 minute to melt cheese.

  6. Heat tortilla in microwave between two damp towels (15-20 seconds or so).

  7. Add egg mixture to tortilla and wrap burrito style.
