Whats your favorite high protein, clean, low carb breakfast?

2 eggs, scrambled.  Sometimes I have a yogurt with some fruit.  Sometimes I have half a bagel with some natural nut butter. Sometimes I have toast with nut butter. Sometimes I have oatmeal (made with oats - add a bit of brown sugar or some muesli).  Sometimes I make an udon soup to go with breakfast.  Sometimes I have kashi cereal.  Depends.

I could go on and on.

I'm on the go a lot and I rarely have time for a "sit down" breakfast, so weekday mornings for me are typically one hardboiled egg and Dannon's light fruit smoothies, and then around ten or when ever I'm done with the gym i'll have an apple. 

I go for more of a high protein-high fiber combo for breakfast as most of the best breakfast foods are carby.

1. high fiber cereal (raisin bran, cheerios, mini wheats, fiber one) and a cup of low-fat milk...often with sliced banana on top

2. old fashioned oatmeal mixed with banana and cinnamon with a cup of milk

3. two poached eggs on a high fiber english muffin

4. 2 egg omelet with a ton of veggies and a 1/4 cup of shredded cheese

5. toasted bagel with PB and sliced fruit on top...eaten as a sandwich or as two halves

I love taking mushrooms, peppers, and onions and scrambling them with 1 or 2 eggs, with a piece of fruit on the side. I always wake up excited when I decide to make it the next morning.

My breakfast priorities are a little different then yours. For breakfast, I usually pick 2-3 of the things from this list, depending on what I'm hungry for:

  • Oatmeal (either the Quaker multi-grain or McCann's Irish (steel-cut) oats for fiber
  • 1 egg or scrambled eggbeaters for protein
  • a banana for potassium
  • lowfat light yogurt with fruit & granola
  • coffee or tea

I try to eat a bigger breakfast and then a small, light lunch with an afternoon snack.  I get most of my fiber from breakfast, so that is a top priority for me when choosing meals.  If I'm really splurging for breakfast, I will eat multigrain pancakes or crepes with nutella, but that is a rare treat.  I find that I don't have much trouble keeping my carbs under 50% of my diet, so I don't mind having a lot in my breakfast.  For breakfast, my main concern is getting enough fiber, keeping my calories somewhat low, getting a bit of protein, and making sure that I feel full/satisfied enough that I'm not going to be tempted to snack midmorning or overeat at lunchtime.

 

Il always have a fruit/yoghurt breakfast!

Hey! So I mix the pumpkin with egg whites... to make a pancake... it's awesome! I simply mix about 1/2 cup to 1 cup of pumpkin with about 3/4 cup of egg whites... then pour in a skillet & cook like you would a pancake, flipping when the side sets... then when it's ready to plate, I sprinkle it with cinnamon & stevia - it's great and really energizes me!

I also eat simply a cup of pumpkin puree with cinnamon & nutmeg & stevia and then have a poached egg on the side - I really like whole eggs so I have been eating this breakfast a lot more lately - it's great!! I hope you guys enjoy it too!

So could one feasibly use a whole egg, beaten in place of the egg whites in your first recipe?  Make a kind of pumpkin omelet?   Hmm..bears thinking about.

the yves brand are actually delicious [albeit really expensive]

but they're such a high source or protein and nutrients and low fat/cholesterol

I've never tried a whole egg + pumpkin pancake... but it's worth a shot for sure! and the type of pumpkin I use is yes, Libby's canned pumpkin... BUT you have to make sure you buy the 100% pumpkin puree and NOT the pumpkin pie mix because the latter has sugar added and more calories that are so not necessary - pumpkin is delicious by itself!

I just opened a big can of the Libby's this weekend and ate a puny half cup of it.  Now I know what to do with (some of) the rest in the fridge:  I am SO making this for breakfast tomorrow!  I heart CC.

wow I love pumpkin - what a great idea, totally unexpected! will definitely be trying this asap.

 Veggie sausage, yes!  I can't eat pork, and I've been avoiding a lot of beef, so I've picked up the Morning Star veggie sausage patties and will cook up two with two eggs in some olive oil on the weekends.  It's amazingly good, and a great alternative to my favorite breakfast, which is eggs and arabic lamb sausage (can't remember how on earth to spell it).  I would actually go back to eating the lamb sausage, but the store I shop at here rarely has it for sale!

During the week I take my breakfast to work, so I'll bring a tangerine, a fat free yogurt, and a protein bar of some sort (it depends on what the rest of my food for the day looks like, but either a Kids Clif bar, or a Balance Bar).

I do 100 sit ups before my breakfast...i like to believe it helps "wake up"my digestive system ready for breakfast

I then eat 30gr of porridge cooked with water and i mix in two fruits into it...(try to avoid bananas)and 3 boiled egg whites

some days i have an omellete instead with 4 egg whites and one yolk and vegetables mixed into it and one slice of toasted brown or seeded bread

i also have 2 rice cakes with cottage cheese or tuna and a fruit salad if im bored of eating the other options
