One wrap makes a good breakfast for people in a hurry
| 12 | eggs |
| 1 | onion |
| 1 | green pepper |
| 1 | red pepper |
| 1 | tbsp reduced-fat mayonnaise |
| 6 | tortilla |
- Hard-boil eggs, shell them and crush them
- Mince onion and peppers
- Mix eggs, onion and peppers with mayonnaise and salt & pepper to taste
- Place egg mixture into tortilla wrap and wrap it up.
- Can be kept in plastic wrap for a few days in the fridge.
- You can also add sliced mushrooms, olives, and canned meats to make it more interesting
