I have to bring breakfast to work on Friday!
Any ideas of something healthy and simple I could bring??
I always eat breakfast at work. I have access to a microwave though. I bring instant oatmeal packets, vitatops, fruit, cottage cheese, yogurt. Not all of these at once, but I vary it!

I've made lots of variations on the recipe but here's my typical "cookie": 1/3 c rolled oats (don't use quick oats), 1 tbsp almond butter, 1 scoop vanilla vegan protein powder, 1 tbsp ground flax, 1 small banana (mashed, ~1/2 c), a little cocoa powder, cinnamon and a bit of almond milk.

My and my co-workers alternate bringing breakfast for everyone else on Friday mornings. It's my turn this Friday, so I'm looking for ideas to feed about 15 people!

bagels, cream cheese, peanut butter, apples and bananas...and cinnamon if you want to be extra special
they can put cream cheese on their bagels and eat the fruit separately or put the fruit on top
I love putting peanut butter on a bagel and sliced banana or a sliced apple on top...chock full of protein and fiber...very filling.

Breakfast burritos.
You can get low carb tortillas for them, scramble eggs, then toss in onion or green onions, cubed baked potatoes, some black beans, get a jar of salsa and a tub of sourcream. You'll want to foil wrap each burrito for insulation or put them in a microwaveable container for quick reheating.
I second the breakfast burritos! They're delicious. Bring a bag of seasonal fruit (apples or grapes are good), too, in case a burrito isn't enough for some. :)

I second the pancake idea. Just dont make them all "american".
Make them the european way. just make them all thin and flat, and put some no sugar jelly on it and roll it up :)
For 2-3 people you will need;
4 eggs, 4 dl flour, 1/2 tsp salt, 5 dl milk, and Pan cooking spray. (If you dont want to use butter, i assume you dont.)
First add about half of the milk into the flour, whip it until its smooth, then the rest of the milk, then whip in the eggs, and let it sit for about 15 minutes until it gets thick.
Remember to cook them thin and turn them over when they have gotten a nice golden color.
You can put anything you want on these puppies, sugar, jam, marmelade, berries.

Do you know how to make crepes?
They are pretty easy to make enough for your crew. You can fill them with almost anything, roll them up and place them in a nice dish.
And then with it serve some fresh fruit by itself or as a salad.
HARD BOILED EGGS! Ah ha ha! Imagine if you came into the office with three dozen hard boiled eggs in the carton! That would be pretty funny (and maybe stinky) but it's probably something I WOULD do... ha ha! And then I'd probably bring some fresh fruit & vegetables... and maybe some salsa, olive tapenade, sun-dried tomatoes, pureed pumpkin (or other squash)...
