Recipe Ingredients for Buffalo Chicken Chili

1 tablespoon olive oil
2 pounds chicken breast, boneless
2 large carrots
3 stalks celery, finely chopped
5 cloves garlic
5 tablespoons chili powder
2 tablespoons ground cumin
1 tablespoon ground paprika
1/2 cup red pepper
1/2 cup hot sauce
30 ounces tomato sauce
15 ounce tomato, crushed
12 ounce black beans
15 ounce kidney beans

Recipe Directions for Buffalo Chicken Chili

  1. In a food processor, grind 2 pounds of boneless, skinless chicken breasts.

  2. Heat olive oil. Add chicken and cook 7-10 minutes until chicken is no longer pink.

  3. Rinse out food processor. Add carrots, celery, red pepper and garlic. Pulse until fine. Add to chicken mixture and cook for 5 minutes, or until vegetables start to soften.

  4. Stir in chili powder, cumin, paprika and salt and pepper. Mix well. Stir in hot sauce, tomato sauce, crushed tomatoes and drained beans. Simmer on low over medium-low heat for an hour.
