Butternut squash recipes?

I want to make butternut squash tonight for dinner. Does anyone know of a good recipe?

That is the BEST recipe for butternut squash fries.

Slice them very thinly!  Just a tip.  ;D

I made some awesome soup the other day.

I cut up some butternut squash, an onion, a couple cloves of garlic, and a carrot and put them on a cookie sheet.  I drizzled them with a tablespoon of olive oil and sprinkled with salt and pepper. I roasted them for about 1/2 hour ro 40 minutes until they were nice and soft, and then I pureed them in the blender with chicken stock (can use vegetable too, but I had some the chicken stock opened in my fridge)  it was quite yummy, in fact I think i will make some more tomorrow!

I 2nd the butternut squash fries! I havent made them in awhile but they are so yummy, I especially love Old Bay seasoning on mine :) and dipped in ketchup of course

I have tried the fries before they are soooo good

This is a sweet rather than savory recipe, but shred some butternut squash and mix it with a little bit of sugar, then wrap in phylo dough and bake.  That's it! - delicious!!!!!
