BUTTERNUT squash soup recipe anyone?

I am looking for a healthy, lowfat recipe in which I might use butternut squash.

Anyone out there have a recipe that might work?

maybe you are asking for recipes people can personally vouch for, but to get you started, enter "squash soup" into the search bar and hit "recipes". i got lots of hits.

mmm that makes me want to stop by the farmer's market after work and make some myself!

Here's my very simple one

butternut squash soup

If you want velvety smoothness, press it through a strainer before serving.

I make butternut squash soup basically the same way as the ling clairelaine posted, except I use veggie broth instead of chicken broth.  Really couldn't be simpler, in my opinion.  I sometimes add thyme to the soup as well. 

I like my soup smooth, so I use an immersion blender on the soup after it's cooked.  Another way to do it is to blend the soup in a regular blender.

 I love this and eat it about 3 times a week at this time of year! I use 2 small onions and 2 cloves of garlic, sautee off in vegetable oil with some dried or fresh chilli then add atleat 150g of squash then any combination of celery, carrot, sweet red peppers or turnip. Top up with water and a vegetable stock cube, simmer 15 mins then blend it smooth, add some freshly milled black pepper and you're done, fabulous! If you don't like it too hot you can use cumin or corriander instead of the chilli or add a dollop of low fat creme fraiche at the end to take the burn off. If you have extra calories to use you can also add some lean bacon (already cooked) or toasted seeds at the end.

I love soups, the best investment you can make is The Soup Bible, part one or two! These have complete nutritional info with each recipie and the editions I have also have little tips where you can tweak each recipie to be healthier.

Easiest soup ever.

 

I regulary make Butternut squash soup.  My husband loves it too.  It has to be easy though.

1 Butternut squash Peel and Chopped

2-3 carrots - peeled and chopped

3-4 sticks celery chopped

1 onion peeled and chopped.

Throw all veg in large saucepan. Pour in 2 litres of vegetable stock. Add lots of black pepper.   Cook for 25-30 mins.   Blend until smooth once cooled.

I add eaither pears or apples to my squash soup and puree through the blender.  I also make a curry squash soup to mix it up ( without the apples or pears of course!)  If you are interested in either ...let me know and I will post them.
