I detest cooked cabbage.  The smell makes me gag.  Mostly, my hate for it comes from the many times growing up that my mother (love you mom!) boiled it to death.  The sulfuric smell would permeate through the house and I would know right away the torture that awaited me.

However, cabbage is just so darn good for you.  Sure, broccoli and collard greens and a number of other veggies have the same benefits, but I really would like to not hate cabbage so much.

I eat it in coleslaw when raw and I love it.  I even love it in egg and spring rolls.  But any other way I encounter it, I gag.  But I'd like to find more way that I would like it without covering it in bacon grease, cheeses, etc where the benefits of cabbage are counteracted by artery clogging messes (note, I love bacon and cheese and all that stuff, just don't want to have to drown my cabbage in it to get it down)

So if anyone has any good recipes for cabbage I would be more than grateful.  It can include oil and bacon and all that jazz, so long as I'm not drowing the cabbage in it.

My favorite salad. I ate this last night for dinner anyway. It uses green cabbage, but I use both red and green + carrots. Delicious! Avoided most of the oil, almonds, and those dried noodles (the noodles add nothing to the dish). I also use cabbage as my base for other stir frys like:

All super delicious. Tonight I'm going to use my leftover cabbage and make a tzatziki sauce with curry chicken to top it.

Cabbage Casserole

 

Ingredients:
  • 1 small head of cabbage
  • 1 small onion, chopped
  • 6 to 8 slices bacon or turkey bacon, diced
  • 2 teaspoons vegetable oil
  • 1 can (10 1/2 ounces) cream of celery soup
  • 3/4 cup milk
  • 1/2 cup mayonnaise
  • Dash pepper
  • 2 cups fresh bread crumbs
  • 3 tablespoons melted butter
  • 1 tablespoon chopped parsley
  • 1 1/2 cups shredded sharp Cheddar cheese
Preparation: Heat oven to 375°. Lightly grease a 2 1/2 to 3-quart baking dish.

Cut cabbage into 4 wedges, then cut out core and cut each wedge crosswise into thin slices. Put cabbage in a saucepan, cover with water, and bring to a simmer. Cover and simmer until tender, about 10 to 12 minutes. Drain well and set aside.

Meanwhile, sauté the onion and diced bacon in the vegetable oil until onion is tender. In a bowl, combine the soup, milk, mayonnaise, pepper, and cooked onion and bacon. Add the cabbage and stir to mix well.

In another bowl, combine bread crumbs with melted butter and parsley. Toss to blend thoroughly.

Sprinkle about 1/3 cup of the crumbs over the bottom of the casserole. Top with the cabbage mixture, then sprinkle cheese over all. Top the cheese layer with the remaining bread crumbs.

Bake the casserole, uncovered, for 45 minutes.
Serves 6 to 8.

 

I love cabbage no matter how you cook it. Cabbage soup with short ribs is my fav foods in the world but seeing as you dont like to cook it here is another one.

using a slicer thinly slice a head of cabbage, mince a hand full of fresh basil and some dill and combine. Lightly squeeze the juice of half a lemon over it drizzle with olive oil  1 tsp of vinigar salt and pepper and let marinate 30 minutes  Good Stuff

mmmm I also love sardines in hot tomato sauce or mustard sauce rolled in raw cabbage leaves yum. eating it right now

So I completely forgot to update this thread on the results of my experimenting.

I sauteed it with some bacon, green apple, onion and balsmaic vinegar.....and there was no smell at all!  I was very happy with that!  The bacon, I think, did little to add to the flavor so I'll probably leave it out next time.  I think I went a little overboard with the vinegar though so I'll have to watch that.

I even ended up buying another head this week!  Yay, a new veggie to play with!  Think I'll be making it up a lot simpler next time.  I'll chance it, to get more of the cabbage flavor but hopefully the smell will not be there again.  Maybe just some onion and soy or teriyaki sauce next time.  We shall see!

Sauteed cabbage rocks   thinly slice half an onion then mince it mince 3 cloves of garlic cut a cabbage in half then cut one half into quarters (save the other half for another day) remove the center core on the 2 quarters then slice each quarter into thin strips. heat a deep sause pan with 1 tbs olive oil when hot add 1 tbs margarine or clarifyed butter (clarifyed butter has a higher cooking temp before it burns) and the onion cook the onion till it starts to brown then add the garlic wait 2 minutes and add your cabbage strips toss the cabbage around to coat it in the oil mix add 3 tbs water and cover (it makes it wilt faster) 5 minutes later uncover and mix cook about 15 minutes on med heat or untill it starts to burn on some of the edges  add salt pepper and a tbs vinegar
