Cabbage Soup - need to make something tonight!
I need some soup for the week and am thinking Cabbage soup of some kind.
I have a whole head of green cabbage, leeks, carrots, tomatos (canned and fresh), onions....
Any idea how I can put them all together into a soup? What spices (I have lots of dried and some fresh)... would you use?
I wouldn't use the entire head of cabbage in a pot of soup (unless it's a really big pot.) With the good ingredients you have, I'd just chop them up and throw them into a pot of either water or broth. Simmer until veggies are tender, taste and season.
If you use herbs and spices, don't get too complicated. The fresh flavors of the vegetables will actually be seasoning enough. Fresh parsley is always a great addition, added at the end.
I use a whole head if it's small but it still makes a put stock put full. Put in your cabbage, leeks, carrots and if you can add some corn and zuccini. Dump a can of crushed tomatoes and then cover the rest with chicken broth. For an italian flavor add garlic and italian seasoning and maybe italian style can tomatoes... for mexican you can throw in some green chilis, jalapenos or Rotel...
Tomatoes and cabbage are delicious together. What I usually do with a head of cabbage is cook half and use half to make coleslaw. I like variety.
DELICIOUS slow cooker recipe. Can likely be adapted with two cups of water to cook on the stove.
3-4 mdium new potatoes with peel, sliced
2 onions, sliced
3 carrots, sliced
2 cups chopped green cabbage (I add more 'cause I love me some cabbage)
1/4 cup Italian dressing (you can substitute a little olive oil with your own herb choice)
1 (1 pound) ring kielbasa sausage
1 (15 ounce) can Italian stewed tomatoes
Place potatoes, onions, carrots, and cabbage in slow cooker then drizzle stewed tomatoes in over veggies.
Cut sausage into 1-inch pieces and place on top of veggies.
Cover and cook on LOW for 6-8 hours or until veggies are tender.
Serves 4 to 6.
I think if you wanted to do this stove top do essentially the same thing but add two to three cups of water. Add everything but cabbage and sausage and bring to a boil. Turn to low, add cabbage and sausage and then simmer for an hour or until veggies are tender.

It's 478 calories for 4 servings. So six would be 318. Not too bad. =)
And because I love cabbage so much, two German family recipes for you. Might be a little difficult to prepare on a time constraint, but for the future... ^_~
