This forum is for ladies who know what a roux is how to make it! You don't need to speak Creole or French all you need is true appreciation of Southern style,  great  food  and  the desire to  shape up  for good!

Gumbo is not as high in calories as people might think...however, the requisite rice and cornbread are a tad high.....:)
MMM..love the gumbo! I recently made a low country boil for friends of mine (crab, shrimp, onion, potatoes, andouille sausage, corn and garlic cloves - for non-southerns who do not know) and was pleased how much I could have and stay within calories!

BTW - I was born in New Orleans, went to college in AL and now live in GA... so I guess I qualify as southern.
Hi Balancing, I noticed you live in Baton Rouge.  I was born in AL, lived all over the south including 11 years in Morganza, New Roads Louisiana area.  I love Cajun food and every thing I cook seems to have its roots in what I learned from cooking in Louisiana.   Actually I find a lot of states have some regionalized food heritage that I enjoy but, being from the south, southern is my favorite.   However, we also seem to have the most fattening recipes on the planet.   It is hard to come form my family and lose weight because Sunday breakfast always consists of biscuits and gravy, scrambled eggs, ham, sausage, bacon, preserves and pancakes.  Not to mention the old stand by of Kay-ro Syrup and a pat of butter mixed and sopped with a buttermilk biscuit.  Oh, this is following Saturday cook outs with bar-b-que, boudin, grilled bread and potatoe salads (real yellow stuff that melts in your mouth) Even Crawfish can be high in fat and sodium but well worth it! Fish fry any one?

I found the right forum.  It took lots of searching. 
I'm here....from South Alabama....I'm the queen of roux in my family and I make my own biscuits from scratch! Gotta love the South!!
