Why don't you read the top thread 'What did you eat today?'. There's everything you need there.
2000 is too little, anyway. You should be at a min 2500.
full fat dairy
lots of cheese
whole eggs
avocados
olive oil
olives
peanut butter
dark choclate
granola
real sugar, honey, syrup, etc.
whole grain bread
oatmeal made with milk
cream based soups made with full fat milk
crackers and cheese
trail mix
dried fruit
...the list goes on and on...the typical examples
breakfast:
oatmeal amde with full fat milk, 2 oz almonds, 1/4 cup raisins, and a cup of juice...well over 700 calories and its only oatmeal and juice..not a lot
lunch
a sandwich with regular ww bread, a banana, 3 tbsp peanut butter, 1 tbsp jam, a cup of milk...again well over 700 calories and it's only a sandwich and milk
dinner
3 oz salmon cooked in 2 tsp olive oil, 1 cup pasta with 1oz cheese and milk for cheese sauce, 1/2 cup peas almost 800 calories and not very much
snack
1 regular yogurt [140 cals] 1/4 cup granola [100 calories] 2 tbsp honey [80 calories] so another 320 calories
bringing you to 2500, and it's regular meals, not overly large or difficult to digest. steer away from bulky things like salads and soups, unless they are cream based, oil dressing and croutons, almonds, and nuts on the salad!! Hope this helps :)
thanks all, its a good start!!

Here's a 2,000 calorie meal plan in diabetic exchanges:
Breakfast: 3 breads, 2 meats, 2 fats, 2 fruits, 2% milk
Lunch: 3 meats, 1 vegetable, 2 breads, 2 fats, 2 fruits, 2% milk
Dinner: 3 meats, 1 vegetable, 2 breads, 2 fats, 2 fruits
thnk you!!!
This can be adjusted to any calorie level by increasing the portion sizes of the higher calorie foods
start using sugar instead of sugar substitutes, and put peanut butter on everything. Thats a good way to increase the calories, without altering your current meal plan too much. Of course when trying to recover you shouldn't get in the habit of eating the same thing everyday, because thats an OCD trait, which is an underlying trait of eating disorders.
