| 1 | chicken breast, skinless |
| 1/2 | cup celery, chopped |
| 1/2 | cup onion, chopped |
| 1 | cup carrots, cubed |
| 1 | cup zucchini, cubed |
| 1 | small potato, cubed |
| 4 | cups water |
| 1/4 | tsp marjoram |
| 1/8 | tsp salt |
| 1 | clove garlic |
| 1 | lime, wedged. |
Recipe Directions for Caldo de Pollo - Chicken Vegetable Soup
- Sear chicken breast with spices. Add water, onion, and celery. Bring to a boil and lower heat. Simmer for 20 minutes. Add potatoes and carrots, simmer for 10-15 more minutes. In the last 5 minutes, add zucchini.
- Add lime (or lemon) to taste upon serving.
