Basic chicken soup with vegetables, mexican style. Great with red rice added to it.

Recipe Ingredients for Caldo de Pollo - Chicken Vegetable Soup

1 chicken breast, skinless
1/2 cup celery, chopped
1/2 cup onion, chopped
1 cup carrots, cubed
1 cup zucchini, cubed
1 small potato, cubed
4 cups water
1/4 tsp marjoram
1/8 tsp salt
1 clove garlic
1 lime, wedged.

Recipe Directions for Caldo de Pollo - Chicken Vegetable Soup

  1. Sear chicken breast with spices. Add water, onion, and celery. Bring to a boil and lower heat. Simmer for 20 minutes. Add potatoes and carrots, simmer for 10-15 more minutes. In the last 5 minutes, add zucchini.

  2. Add lime (or lemon) to taste upon serving.
