Does anyone know how to make "califlower mashed potatoes?"  I've heard about it but never found anything about it.  Yes, I could look it up on the www but that would prevent me from getting other feed back!  Laughing

don't you just boil some cauliflower with your potatoes and mash them together?  my mom used to try to trick me with this when i was a kid.  it never worked ;-)

edited to add that anything can be yummy, if you put enough butter on it (sorry - cauliflower is about my second most-hated food, right after brussels sprouts).

I remember reading about this in another forum topic about "hiding" vegetables, but now I can't find it!

Anyways... you basically just mash up cauliflower with a little bit of milk... maybe add some butter, cheese, or sour cream for some extra taste.

Or... you can just add some steamed cauliflower and mash it up with some potatoes to make them more filling, but healthier! :)

Slightly off topic, but another great cauliflower recipe is "Cauliflower Popcorn". Cut the cauliflower into pieces double the size of a piece of popcorn (they will shrink), coat lightly with a non-stick spray, and bake in the oven on a pan until crispy. You can add salt to taste, or splenda for a kettle corn flavor, or pepper, or whatever you like. It's one of my favorite snacks at home. =D

Oh yes!  Anything to help satisfy my cravings.  I've been doing horrible lately and I plan on definitely stepping up my game.  These sound lovely.  And the popcorn idea sounds wonderful.  I have asian seaweed sesame sprinkles that is supposed to go on rice, but I've found that it's wonderful on popcorn.  I wonder if it would be doubly good on cauliflower popcorn? 

I'm going to the super market tonight, but I need to have a snack or something first.  I'm really ravenous right now!  But I'm headed straight for the vegies. :-)

I usually make cauliflower mashed potatoes with a head of cauliflower and one potato. Make sure you boil the cauliflower until it is pretty soft, otherwise you end up with lots of lumpy bits. Having a food processor makes the "mashing" easier too.

I don't add butter, but I do add a generous amount of non fat or low fat greek yogurt (the super thick kind) along with plenty of salt and pepper.

I also make mashed potatoes and carrots (not quite as low cal as cauliflower, but still lower than regular mashed potatoes). I use greek yogurt for these as well. They turn a pretty orange color and they taste great.

Anything really, but cauli is good as its low cal and tastes like mashed potatoes. Try also turnips and rutabagas but you can add beetroot to make mash bright! Pumpkin and sweet potato are GOOD.

This is what i do. I even fooled the boyf with it! Steam/microwave (with water) the cauli head until ridiculously soft. Then blend/process with a bit of either natural yogurt (not the swet stuff) (1 tbsp per quarter of a head, or to taste) low fat sour cream,  low fat cream cheese, and some garlic and pepper. If i dont mix anything with it I top it with cottage cheese. You can use it just like mashed potatoes, and put it on top of casseroles, just add a liuttle butter spray so its crispy.

I tried making mashed cauliflower (faux-mashed-potatoes) a few months ago and it was a complete failure, and I actually like cauliflower, I found the recipe online...but it tasted nothing like mashed potatoes..was more like some mediocre cauliflower dish with too much garlic. :S 

However, my grocery store sells a ready-made low-cal shepherds pie made with mashed cauliflower and it tastes amazing (imo)...so obviously it can be done.

I think its a matter of getting the consistency right, use a blender to puree them, and then add in the other ingredients (don't remember the recipe I used, but there are many online). Let us know how it turns out if you try it! I may then be motivated to try making it again! :)

As a matter of fact, I bought two heads of cauliflower AND turnips (on a whim, I've never tried turnips) before reading the messages!  So maybe I'm on to something ;-)  I'll let you know how it turns out.  And even if it doesn't taste like mashed potatoes if it still tastes good it may be soemthing I can do often.  I got an acorn squash last night too, but to be honest I'm at a loss for it too lol

My mother, who does the atkins diet, thought it was an amazing substitute for crunchy salty carbs.

It might take a few tries to get it right-- you have to practice getting them crispy without burning!!

This is a recipe I've used before. No potatoes were harmed in the making of this side dish. My family enjoyed it and I think my grandmom was slightly disappointed when she found out she enjoyed cauliflower rather than mashed potatoes. If you like some lumps in your mashed potatoes, leave some cauliflower not completely mashed to give a little texture.

I know the restaurant chain Hoolahan's offers cauliflower substitute for baked potato or fries. 

Might have to make this again. Now you got me craving it!

I made it once... It shrinks. When you mash the cali, one head becomes about a cup and a half of mashed vegetable. -_- It seems like since the calorie density goes up, you'd be just as good eating mashed tatos prepared with nonfat milk and no butter.

It is delicious, though.
It obviously isnt potatoes but if you keeping expectations in check, I find it an amazing substitute.

I whole heartedly agree with preparation being key and dont give up because I had to try different times before I got it right.  Double agree on cooking extremely thoroughly - not doing so was my first effort mistake. 

Eventhough I like food room temp, this definitely is best served warmed so after preparing I micro d it to warm it up again after spraying with CantBelieveNotButterand sprinkling with a little salt.  In fact, I'd start low on any spices since you can work them up (another failed effort - to much garlic which I dont use at all now).

Something about the mashed consistancy that makes it more filling then regular cauliflower, which I cant explain. 

FEANOR!  I dont do recipes normally (this being an exception) but that DOES popcorn cauliflower has me writing down your instruction and I dont even like popcorn LOL.

I have experimented for years w/mock mashed potatoes. So far this is the easiest and best tasting of my attempts.

1 bag of frozen cauliflower

2 wedges of laughing cow cheese

1/2 tsp garlic powder

1 tsp chicken granules ( you could just use salt too)

Microwave the cauliflower in a bowl w/o water for about 5-6 minutes. Stir. Microwave more until super tender. Use a hand blender to mash the cheese, garlic and chicken granules into cauliflower. Serve like potatoes. The trick to good mashed cauliflower is not to cook it in water. It gets too soggy. So if you have fresh cauliflower try steaming it instead of boiling.

That sounds really yummy.  I definitely want to try it.  I don't have a vegetable steamer.  To be frank, my kitchen isn't the most well-equiped.  But I do have a kick butt juicer and food processor though.... :-D
