LOW CALORIE CHEESECAKE TO LIVE FOR
CRUST 1 1/2 cups of finely crushed lowfat vanilla wafer crumbs 1/4 cup of no-calorie refrigerated butter spray (you may add a bit more or less to get a workable crust as temperature, humidity & altitude affect differently) You can also opt to use a ready-made crust of your choice but be sure and count this calorie content as part of your recipe. If you use a ready-made crust, subtract 65 calories to delete the given crust, then add the calories of your ready-made crust and divide by 8 (8 servings).
FILLING 2(8 oz) packages of fat-free cream cheese, softened Nutrasweet (add as much or as little as you like - you control the sweetness) 1 teaspoon of vanilla 1/2 carton of Egg-Beaters (or 2 eggs) Optional - you can experiment with additional lemon & lemon peel, strawberries, extracts such as almond, rum, brandy, mint. The possibilities are endless.
DIRECTIONS - Mix crust ingredients and press into springform pan OR just use an ovenproof deep-dish pie plate. Next, mix filling, adding the eggs last until blended. Pour in your crust & bake for about 40 minutes (until the center is almost set). Refrigerate at least 3 hours before eating. Top with fruit, fat-free topping, drizzled jelly or a bit of toasted coconut. Serves 8.
CALORIES = about 125 per slice.

I made this up last night, and it cured my cheesecake craving while staying under 200 calories. It was delicious!!!!
I crushed 8 graham cracker squares and put it on the bottom of a 6X9 casserole dish. I mixed up 1 3/4 cup skim milk with a package of sugar free-fat free cheesecake flavored pudding mix. Pour it on top of the crumbs-(I poured kinda fast so the crumbs didn't stay on the bottom too well. Maybe if I waited to let it thicken a little first?) Threw it in the fridge for 15 minutes or so. Cut into 4 servings. Then I topped my serving with 1/3 cup of lite cherry pie filling, and a scoop of fat free cool whip.

Damn America's pudding mix!! Our closest version is vanilla and is hugley fatty and gross. Man, I wish we had those Jello products... and cool whip while you're at it...
herring, try Bird's Custard Powder. You can control the amount of sugar in it and you can make it with fat free milk. It's good!

abcsmom: Where did you find a sugar free-fat free cheesecake flavored pudding mix??? I live in Ontario. Never seen that before. I have to find some....gotta try that recipe for sure.

I live in Iowa, and I get it at Hy-Vee and Fareway. It's Jello brand, and they have sooo many great flavors of the fat free-sugar free puddings to make "healthier" desserts with. I ran out and bought another box of the cheesecake one, because I still have lite cherry pie filling I need to use up. ;D

At a weight watcher meeting someone suggested mixing one package of the sugar free, fat free white chocolate pudding mix with dannon light n' fit vanilla yogurt. I do it all the time. It's delicious and it comes out to be about 90 calories per serving. It's not exactly cheeseake, but it tastes like it and it satisfies me.
Claire, Birds you say? I havent seen it around, nor could I find it on the net. Do you have a link for its nutritional info. In the mean time, baby custard is oddly low in cals...

Ah ok! Yeah it soudns good but I cant find it in Australia. I knwo we have custard poweder but its usually add water, the end. I'll look out for it tho.

Thanks red. I guess I made the stupid assumption that British products would be available i Australia. I buy Bird's off the shelf in supermarkets here. Try googling just custard powder and see if you can find anything that resembles what we Americans call pudding.
Of course Bird's isn't instant - you have to cook it in hot milk then cool it. I can probably come up with a recipe as a substitute - it's just milk thickened with cornstarch or the like and flavored with vanilla extract. Stay tuned!
