I've been really careful throughout the day with my calorie counting. But once the evening comes and after dinner I'm always between 800 and 700 calories. Is it healthy that I eat the rest of the calories at night. Or should I try and spread them out throughout the Day.

IMHO, it is probably healthier to spread them out over the day; however, the most important thing is to consume fewer calories than your body burns to lose weight. I use a weekly averaging method where I eat fewer calories 5 days out of the week and more on the weekends. It has been very successful for me.
In a perfect world it would probably be better to spread them out. But I, and most people have the same habit. Were usually on a schedule during the day and do not have as much time to eat, so we eat less. The evening is our time to unwind and relax and we have more time to consume a bigger meal. As plawler67 said, as long as your're burning more calories than you're consuming you will lose weight. If you're able to spread it out a bit you should do so. Also, try to make sure you're not eating right before bed. It's good to give your body a few hours to digest before going to bed.
It's actually better to eat more calories earlier in the day. That way you burn them throughout the day and if you save them for dinner and right before you go to bed those calories will still be with you when you go to bed and then just kind of build up as you sleep. So better to get rid of them early in the day :)
I've heard that as far as weight is concerned, it doesn't matter what time of day you consume them. A calorie is a calorie no matter when it's taken in. I don't remember where I've heard this from but I believe it was in response to Bob Greene's advice that you shouldn't eat 2-3 hours before bedtime. As long as you are eating your range of calories, I'd think you'd be fine. It may still be better to eat throughout the day, as it is believed that eating several small meals throughout the day rather than three staple meals will increase your metabolism. The other effects it could have on your body by eating most of your food at night is also debatable. And then there's also souces that say skipping breakfast will make you overeat in the evening. Maybe if it continues to be an issue you should seek out a nutritionist for more reputable advice.
