The 73 Calorie Cupcake! Yes! Includes the Frosting!!
Ok, I got inventive and made some cupcakes using Angel Food Cake mix last night. We made a wonderful set of 32 cupcakes out of this box! And yes, with 1 Tbsp of the 'frosting' I have below, you get only 72.5 calories PER TREAT!! How wonderful! They are quite delicious so I recommend these only if you have some self control. Or those 72.5 will quickly add up to 145, 217.5, 290, etc. ![]()
Perfect treat to take along to any social gathering this spring/summer! To make them extra pretty, I would suggest slicing up a peach in thin slices and adding 1 thin slice atop the frosting on each cupcake. (or a thin slice of any replacement fruit you love) Though, this has not been added into the calorie count, it can't add but a tiny bit more. (A whole peach is only 61 calories!) This would be easy to substitute any favorite Jell-o flavor or fruit. But here's my recipe for:
PEACH ANGEL FOOD CUPCAKES
What you need:
1 Box of Betty Crocker Angel Food Cake
1 small box of Peach Jell-o (I used regular, but you could try sugar free for even fewer calories) dry--not prepared!
1 cup & 1 Tbsp water
1 medium peach (peeled and minced into small pieces)
1 tub of LIGHT Cool Whip
Take the chopped up peaches, put them in a large bowl. Add the cake mix, 3 tbsp of the dry peach jell-o mix, all the water (1c and 1 Tbsp) and mix together. Fill cupcake liners/pan 3/4 full. Put in the overn at 375 for roughly 12-15 minutes. Ready when lightly browned top. REFRIGERATE REMAINING MIXTURE WHILE YOU ARE BAKING A BATCH! We were able to make 32 cupcakes with this last night! Cool cakes completely. Mix the remainder of the jell-o mix into the tub of coolwhip. Gives it a slight color and hint of peachy taste. When cakes are cooled, spread 1 tbsp of cool whip mix atop each cupcake. ENJOY! They really are delightful!

I mixed it by hand. It gets real frothy/fluffy and fills up the bowl. So, definately use the largest bowl you have! :)
I was thinking that I will make these cupcakes for my daughter's summer birthday. With strawberries and strawberry jell-o too, just as you mentioned. She loves strawberries! I think that will be great....and, of course, pink!

You are so welcome! I am always on the prowl for lo-cal versions of my faves. Even found a good recipe for a Chicken Alfredo that uses 98% fat free Healthy Choice Cream of mushroom soup as a base. It is very delicious too. And about 1/2 the cals of a regular alfredo dinner!
Just wanted to let you know that after reading this yesterday, I got VERY inspired and my daughter and I made a batch today! We used strawberries and sugar-free strawberry jello & confetti angel food cake - they are DELICIOUS! Thanks so much for the recipe!

cupcake recipe made over 24 i kinda ate the batter after filling two 12 pans >.> with the calories being about 75 for the muffin and around 50 for the icing. I love the peach idea though. I want to try making them again with lemon extract or any other kind of extract.

However, I always change up a recipe. I changed a few things to lower the calories more. First I used healthy harvest whole wheat linguine. For the soup, I used 1 can of Healthy Choice Lower Sodium 98% fat free cream of mushroom. I omitted the butter completely. (I baked the chicken in the oven instead of frying in the pan. Yes, more dishes, but pulls alot of the calories out of this dish! And I used skim milk. I also added fresh mushrooms, onion, carrots and broccoli so this brought up the number of servings than it says, therefore dropping the calories with it! (1 1/2 cup serving) I got it around 300 cals----pa-sha to the websites 508. I am getting ready to make it again, in fact I got the soups yesterday! I had the cals all figured out when I did it. I thought I kept it somewhere, but I guess not! I can't seem to find it now. But, I usually just eye things out when I cook and make substitutions with low cal stuff whenever possible. Except if I'm making it for the first time and want to figure out the calories. (I used a tad less of the cheese too. I usually double recipes as we are a family of 5----6 on the weekends. When I made it I used 1/2 c of the parmesan for a double recipe which it calls for that amount with a single recipe) It's really very tasty, even with half the cheese!

I made these tonight and they are awesome! I used banana strawberry Jello and a cup of strawberries instead of peach. My 12 year-old really liked them. I don't feel guilty about putting one in his lunch box tomorrow.
This sounds awesome and the first thing I thought of was strawberry when reading this.....so glad to see others have thought it, tried it and approved of it! Thanks for finding a "treat" for us!!
It is great. I have also tried the strawberry, although I admit I did like the peach better. I suppose a variation could also be made by adding unsweetened cocoa powder to the mix or sugar free chocolate pudding (powder) to the mix as well as the cool whip. Yumm.........as I think about that now, I'm having a hankering for it!! :) I think I will try a chocolate variety next! I'm sure the calories will go up some, but not nearly as much as a normal chocolate cupcake. If/when I make them, I'll let you know the cals on that variation!
