What are some of your favourite 500 calorie meals that are healthy, require very few ingredients and happen to be vegetarian?

I'm at a loss lately when it comes to making meals.
I can't usually think of anything to make so I just end up eating mashed potato, boiled carrot and tomato sauce.
Hardly the healthiest of meals, I know.
So, I need some knew ideas!
I'm usually great at making healthy meals but they seem to always involve greens or vegetables that I don't have at the moment.
For vegetables, basically I only have potatoes, carrots, onions and canned tomatoes lol.
In the form of protein, I have canned navy beans, almonds and about half a cup of dried chickpeas left (which im soaking and hoping will be soft enough to cook up by lunch or at least dinner later today.
But anyway, I need some ideas!!

Hi temp_girl,

Easiest thing in the world is a nuked potato covered with a heaping mound of salsa. If are lacto-ovo and eat cheese you can add a small sprinkle of that on top and still be good w/calories. Salsa has very few calories so you can add as much as you like of your favorite brand and intensity.

medium baked potato - 278, 1 Cup Salsa - 70, 1/4 C cheddar - 110

total calories 458

I just found out about adding and analyzing recipes! cool. I added my recipe for Texas White Chili. It can easily be made vegetarian by substituting Morning Star Crumbles for the turkey - and thus made even lower calorie!

It's a very fast fix (approximately 30 minutes) and makes four 336 calorie servings that you can keep in your freezer or fridge for an even faster meal. With these calories, you could add some baked blue taco chips or a little cheese and still be under your 500 calorie goal.

Ok, I figure you can use the analyzer to figure out the exact calories (cause I'm too lazy), but trust me, I make this all the time and it's really low cal:

Main Ingredient:

1 pack Santa Fe Bean Co., Instant Fat Free Vegetarian Refried Beans (prepared)

I put this in corn tortillas and fry it up into a taco, salt up each side a bit and add any of the recommended fillings:

Lettuce, tomatoes, sour cream, cheese, salsa, hot sauce, avocado, guacamole - the possibilites are endless. You can serve it up with a side of mexican rice, mmm...

BTW, you can also use mashed potatoes and put it inside of a taco: nummy-nummy.
