I think I'm going to try a recipe tonight and I'll let you guys know how it turns out...

You take 1/2 cup a boiling water, add sugar free jell-o (or unflavored gelatin w/ a flavored extract or cocoa powder), mix it until the gelatin's dissolved, put it in the blender w/ 2 cups of non-fat cottage cheese, then let it sit in the fridge.  Sound good?  I thought so.  I'll tell you guys how it is.

Just had a thought; wonder what it would be like using yogurt cheese instead of cottage cheese??  I just might try it; will have to buy my ingredients first.
i made it but it didn't get hard, it had a pudding-ness texture to it. i still loved it but i was just wondering..how long did you refridgerate it? i might have not put enough gelatin in

thanks!
how much water did you use??  mine hardened overnight...
a little less than 1/2 cup, maybe like 1/3, cause i used less cottage cheese
I can't wait to try this.

Thank you so much for posting it.

guys, I am SOOO gonna make like six of these and leave them in the fridge so I can have like one everyday!!!!

FELLOW CHEESECAKE LOVERS!!!

I made this again with a couple of revisions!  I used 8 ounces ff cottage cheese and 8 ounces ff cream cheese I cut the water to 1/4 cup and dissolved the gelatin (used one whole packet); used sugar twin instead of splenda (I don't care for the aftertaste of splenda); omitted the cocoa; used vanilla instead of almond.  And here's the real twist-before combining the gelatin with the rest of the already beaten mixture I added 1/2 pouch of dreamwhip and 6 ounces of diet minute maid lemonade!  Whipped until airy, added the gelatin and poof!!! Wonderful!!!!!!OH MY! The texture and the smell is more authentic. This batch yielded about twice the amount of the last one, so it would really fill up a pie or spring form mold!I portioned it out in mini muffin papers and by my calculation, with a graham bottom in each, each mouthful of joy is about 30 calories.  Enjoy!! P.S. I'll be trying another version over the weekend!!  My neighbors love it when I get in a baking mood!!!!

If you try it, let me know how you like it.

Susan
Bless you guys for posting this!! :)  I still have a few more grocery things I wasn't able to get last night, so I just might have to get some of this stuff and try it out myself!  It sounds great! :)
Tried it this weekend. I liked it alot , satisfied my sweet tooth, but have to remember it is fatfree and sugarfree, it is not going to be like the real thing.
Gelatin and cottage cheese and cocoa? Bleach that sounds disgusting!!!

But looking at the reviews of people who've tried it...maybe it's worth a try?

Interesting...
what is the sugar equivalent for the splenda packets?  I don't use artificial sweeteners, but thought I might try it with sugar.  If a packet of splenda is equiv to 1 tsp sugar, then that will only add 32 calories to the entire recipe.
this recipe is AMAZING! i had the cheesecake with frozen raspberries yesterday... decadent! it was funny cuz i actually wanted an apple at the time, but i was debating with myself--"maybe i should have a piece of cheesecake instead. it's lower in calories!" it was the better choice anyway, cuz it's much more filling and satisfying than an apple :)
Haha, piffany, I like that way of thinking ;)
So, how did this recipe turn out for everyone?????

i made further modifications... now i use 1 cup of blended FF cottage cheese (180cal), 1 cup of 1%MF plain yogurt (120cal) and 1/2 cup of 1%MF vanilla yogurt (90cal), 1.5 packs of gelatin (7.5cal) dissolved in 1/2 cup boiling water plus splenda. sometimes, just for colour, i blend in 2 strawberries that i nuke in the microwave (so all the juice gets out!) The end product is a yogurty-moussy cheesecake (to be honest, i can't taste much of the cheese anymore), and its really quite good. i cut it into 8 slices for 50 cal each and these are seriously huge slices compared to the original recipe :D i served this to my bf and he asked for seconds! i would love it if anyone tries this variation and tells me how it turns out for them :)
i just tried this recipe today. it was so good. it didn't taste like diet food at all. i used 2 cups of FF cottage cheese (360 cal) and a packet of SF lemon jello (20 cal). You could also try swirling it with SF raspberry jam, you know the ones that have 5 cal per tbsp? You'd get a lemon raspberry cheesecake! awesome, awesome recipe this is.
THis turned out delicious i know it sounds so grossssss. particularly since i hate cottage cheese so i made sure every curd was was gone. I used coconut extract instead and added a ton of splenda because it was not sweet enough to my liking probably 3/4 cups. i thought spenlda was calorie free? will this make a difference. you could get crazy creative with basic recipe. yum o

Hey i was just wondering if this would work with fat free ricotta?, ive got this great ricotta cheese thats only 275 cals for 500g (about a pound) that i though i might use, its a little softer than normal ricotta but still yummy
I bet it would!  I think I'll pick up a little container of part skim riccotta and give it a try.  I think I'll use lime jello and try for a key lime kind of taste.
Can anyone post how to go about making it. Is there something I should be doing before something else?
