35 Calorie-a-slice cheesecake!!
I think I'm going to try a recipe tonight and I'll let you guys know how it turns out...
You take 1/2 cup a boiling water, add sugar free jell-o (or unflavored gelatin w/ a flavored extract or cocoa powder), mix it until the gelatin's dissolved, put it in the blender w/ 2 cups of non-fat cottage cheese, then let it sit in the fridge. Sound good? I thought so. I'll tell you guys how it is.

yeah doris...i'm with ya! i tried it last night and didn't go so well either ;(

I have a couple of mine entered here, so I could cut and paste for you...one is strawberry and one was my attempt at chocolate minus not having actual cocoa powder here, so I used sugar free hot chocolate. I (and my bf) thought it tasted like creamy Whoppers, malted milk balls.... You wanna? ( :

( : I have just kept making, just one more flavor, each time these yummy little treats run out, so I could resist sharing--think about it--key lime pie, banana cream, chocolate with mint extract or use hot coffee to dissolve the gelatin and make mochaccino.....)
2 cups low fat or fat free cottage cheese 320
1 packet unflavored gelatin 20
2 packets sugar free hot chocolate 25 each
sweetener to taste (4 each)
1 capful vanilla extract (20
I mixed the h.c. with 3/4 cup water, hot from the microwave. (I think I would do a full cup next time to see if I could squeeze 2 or 3 more cheesecakes out of it.) Stir until mixed, then stir in gelatin while it is still hot.Dump cottage cheese into blender, then h.c./gelatin mix. Blend until all c.c. lumps are gone. Pour into 12 cupcake foils or I know other people to cheesecake pies, you know. I like the single serving thing for myself. Keeps me from going crazy. ( ; Allow regular amount set up time, couple of hours? I like them with a little whip cream (esp. frozen like ice cream) or as spread on my mini caramel rice cakes, YUM 40 calories each and endless possibilites!!!!
I've used strawberry which was simpler and only 18 cals each -- that one is just the same cottage cheese,and just mix 1/2 cup hot from the micro water with any flavor sugar free jello, then quickly get it all blended smooth and pour into cupcake foils. MY only caveat would be to warn you that whatever color the jello is is the color of your cheesecake. ( : I took this to a guy friend's bday party and they were disturbingly pink.

I think next time I would try a plain old vanilla one with a few strawberries or peaches on top---blueberries, bananas, watermelon, the list goes on and on. I also think the trick of these little buggers is to get the flavoring right before you quit-----I tasted the chocolate ones the first time and thought YUCK, but I added a few more sweetenters and elected at that point to add the second hot chocolate packet to make the kind of chocolate intensity I wanted. I think if I had had some sugar free Hershey's, I would have stuck with one packet and a few tsps of that. YUM! Keep tasting the stuff in the blender until it tastes good 'cause the flavor is not changing once it's in the fridge.

Look up a recipe for hot cocoa. I think its 1 tbsp cocoa, 1 tbsp cocoa sub, but sometimes hto cocoa mix has milk in it too. Maybe you dont need it. Would have to try. Maybe you could do a half recipe?
Okay, so I ended up cheating...couldn't find any vegetarian jelly for the life of me, so used the arrowroot again (big mistake - the topping just collapsed!) however I subbed the cottage cheese for ff cream cheese and it tasted alright...think I just need to get a good consistency now as it tasted better but couldn't stand up on its own!
Was arrowroot the vegetarian substitute someone suggested to you?

It's no 400 calorie a sliver, real cheesecake, by any means, but I love it! I decided when I ran out, I would just make an ew batch, trying a different flavor each time. What is it about my twisted psyche that feel better just knowing there is a sweet, decadent yet healthy dessert in the fridge? I can actually avoid eating if I just know it's there......
Let us know what you think, moscovite----and seriously, make sure you like the way it tastes in the blender because the flavor isn;t changing once it's in the fridge. Good luck! ( : Olivia

OMG I just spent the last 30 minutes reading this thread from the start...I can't wait to try it! I think I'll try using fat free ricotta since cottage cheese just kinda skeeves me...

It's actually pretty good. I like the texture, except that it has tiny bits of solid cottage cheese, but that doesn't really ruin it. I think next time I'll use Splenda, and try using a little less Jell-o. Thanks guys.

( :

I tried to enter my cheesecake recipe into the analyzer and it won't accept:
fat free ricotta cheese although the Kraft Polly O fat free ricotta is in the foods list
sugar free jello for the same reason as above!

OK, here's the best I could figure out--knowing what I know (which admittedly is not much!)
I messed around with the recipe analyzer until I found your Polly O ricotta and sugar free jello and copied down their [12345] item number. Then I messed around some more until I figured out what type of measurement the analyzer was looking for..... Keep trying new if it ever does that to you again---esp. if you know the item is in the database. I always just resort to using the item number if it's being weird.
I got it to accept like this---holler back if it's cursed and doesn;t work again,.....
16 ounces (use ounces! but whatever number you're actually using.....) ricotta's item number is [109554]
and

Okay, now I'm all confused! I prefer Fat Free ricotta over cottage cheese, too. Can somebody please post both recipes w/calorie count and comments? There are so many here that I don't know which is best! Thanks!!!!
