I've been gathering recipes on this site and mixing and matching them so that I have meal plans that equal 1200 calories per day. The problem is that no matter how close I get, it ALWAYS ends up being like 20 over or under. Is this a huge deal or is it workable? I know going below 1200 is dangerous, but if it's only like 10 calories below, is it really a big deal? What about over? Would it throw me off by a lot?

Don't worry about it. Calories are never exact. That 200 calorie recipe? It's not 200 calories no matter HOW exact you measure. Absolutely everything is just a ballpark figure. =)

One meal your calories could be 20 over then the next meal 20 under.  Even when eating packaged food it is the same.  They are never accurate.  I believe the less you stress about it the better.  Stress can cause weight gain!  I just tell myself it all equals out at the end of the day.  20 over one meal and 20 under the other.  Just remember at the end of the day it all equals out!!
