400 cals left for dinner - what can I have?

I have 400 cals left for Dinner. What would be low fat, nutritious and not totally boring!??

Ah im sorry before ive had my 5 cups of coffee its hard for me to comprehend that its not morning everywhere.
My dinner last night was
Lettuce, chopped onions, cucumbers, tomotoes, jalapenos, mushrooms (100-150 calories) topped with Taco Sauce (5 cal per tbsp) topped with 1/4 cup of fat free shredded cheddar (45 calories), topped with 8 shrimp (sprinkled with ****, cilantro and lime juice) probably 100 calories, topped with 2 tbsp Fat free sour cream (30 calories) and 1/4 cup corn (45-50 cal?)
This is a huge dinner and still saves you calories for a pm snack, hope you like mexican/spanish food though
its probably too late now, but tonight im making polenta with green beans and a salad for under 400 claories...
for the topping: 1.75 c chicken stock, 1T balsamic vinegar, 1c chopped onions, .33c chopped celery, 2t minched garlic, 2 lg tomatoes (or 1 can diced), 1 green pepper chopped, .25t dried basil, .25t dried oregano. combine stock and vinegarin 10" skillet, bring to boil over med heat. Add onions, celery and garlic. Cook 5 min. Add tomatoes, peppers, basil and oregano; bring to boil. Reduce heat to low and simmer 30 min or til thick.Let cool slightly and blend til desired texture.
for the polenta: 1.25c cornmeal, 1c cold water, 2c chicken stock, .25c parm grated, .25c low fat extra sharp chedder, 1T minced parsley. In med saucepan combine cornmeal and water;wisk til blended. Add chicken stock; bring to a boil. Whisking constantly, cook10-15 min til thick. Remove from heat and stir in cheeses. Spread polenta out in a 9" cake pan. Chill 20 min or til set.
Coat 10" skillet with no-stick spray. Cut polenta into 4 wedges; place in skillet. Cook til edges brown, about 5-8 min. Serve with topping.
And the green beans are sauted in a small amount of chicken stock til crisp tender thentossed with a small amount of pesto (1T for 1-lb green beans).
Salad is romaine with orange slices, with a lowfat balsamic dressing.

Why does it have to be low fat? A little fat is good for you and boosts the calories. You could have nuts or seeds on your salad, or olive oil, or avocado. Just make sure it's good fats, not saturated or trans fats.
Turkey (60cals) on whole wheat bread (100 cals per slice) with a side of grapes (60cals/cup).
Or a 3 serving bowl of cereal.

Oh im just after a lovely dinner there, carrot soup, bought from a store, poured over baby carrots, baby corn,and mixed frozen veg. (inc. brocolli, carrot slices, cauliflower) 200g of frozen veg, 400mls of soup, 100g of baby corn and 200g of baby carrots, makes two big bowls, its really like a comfort food, really warm and filling, best of all for the two bowls its only.. 396cals and very low in fat, sometimes it amazes me the quantity of veg you can eat for so few cals..
I just made an omelette with 3 eggs and chopped prawns, asparagus, courgette, mushroom, spring onion and some frozen peas with parmesan shavings on top for 377cals or thereabouts. I was proud of it cos my omelettes usually turn out a complete mess but this one was just perfect.
