Do you have a grill?

You can get some skinless/bonless chicken breast, dribble it with BBQ sauce and grill it.

Accompanied by any onions, peppers, zuchinni on the grill with some bbq sauce or other marinade, or even plain!

Have this with some brown rice or cous cous and/or a boiled corn on the cob (I guess you could grill this too but I prefer it boiled)

Depending on your portions this could definately fit into 500 calories!

1 cup of bulgur wheat mixed with 2TBS hummus, shredded baby spinach and roasted red peppers.  1/5" tofu and broccoli stir-fried in about a tsp olive oil (or about 3oz chicken or fish, marinated with dressing) and 4 squares of dark chocolate.

^.^

Saute some chicken breast, zucchini, yellow squash, onions, peppers and tomatoes until done.  Add some marinara sauce and enjoy.  If you have the room in the cals, you can add some pasta and/or parmesan cheese.  Also really good if you top it with provolone/mozz/parm and broil it after it is done to melt the cheese.....I save that for days I have worked in the yard all day :)

Good ideas so far...unfortunately, I am allergic to hummus...Frown

I do want to try some tofu, though becuase I am cutting meat down to once a day, sometimes twice, if in small portions. I want to substitute w/ tofu sometimes.

well I'm making this tonight using light sour cream and maybe lessening the butter amount..first time making it so I have no idea how it'll turn out Tongue out

1/8 of a small Giordanos stuffed cheese pizza topped with sliced tomatoes and fresh basil

and a half glass of red wine

or a dish of blueberries.

I looked at the recipe, and it does sound delicious. I will have to do that sometimes soon. Maybe not today though, cause I don't have all the ingredients

This is my favorite

Chicken Mexicana

The recipe serving is small, only 187 calories, so you could have two servings, or some brown rice or a corn tortilla with it.  Very filling.  Add more peppers to the salsa if you want more bulk.

this!  yummy! anything with pasta is good to me.. you can even make it healthier by using whole grain pasta instead of the regular shells. i would sub the beans for cannelini or something if you are allergic to chickpeas

Mmm. Thanks guys. Laughing

OBSESSED WITH SALMON! ha ha! If I could I'd eat it every single day! Plus it's super healthy and all it needs on the side is some spaghetti squash, spinach, green beans, asparagus or broccoli - all super low in calories which will definitely bring you in at 500 calories!

I had some the other day, and it is the only kind of fish I don't like. It was just toooooo strong for me. I made myself eat it. Maybe I need a better recipe? Undecided How do you prepare yours?

I love cod, snapper, catfish, ruffie, and trout....and lobster and crab Laughing I had the best ever pecan crusted trout this one time, so I would love to find a smiliar healthy recipe. I live in New Orleans, so I learned how to make really good crab cakes and other things like it .

I just put my recipe for Red Pea Soup in the website;

http://caloriecount.about.com/red-pea-soup-re cipe-r246659

Definitely different than regular fare but I'm sure you know it.

Won't work for last night cause it's over and it take too much time but with a little forthought you could freeze some :D

Well, here's what I'm having for dinner:

Turkey breast (cook in crock pot with a little BBQ sauce on it, cooking for hours then when it pulls apart easily, pull it apart using 2 forks. Add more BBQ sauce to taste (you may opt to remove some pan juices if they are excessive)--I use no sugar Kraft BBQ sauce). This will give you have a low calorie, low fat delicious main course. A large serving or serving and a half would be between 150 and 225 calories.

Two ears of corn on the cob cooked in my steamer.  44 calories each. I add seasonings like "bacon salt" (0 calories), lots of Buttery Burst buttery spray (calories), pepper. Yum!

fresh fruits & veggies---tomatoes, peaches, celery
