Hubby and I are heading out camping in a couple weeks and are putting together our menu. We're going to be hiking for several hours each day, so we'll be burning the calories, but camping is also the time we tend to indulge (mmm, s'mores!). Last time we went out for a weekend I came back with an extra 5 pounds from 3 days of camp food (though 3 quickly fell off as my system cleared out
). I'm hoping to avoid that this trip. Anyone have some good recipe ideas? We have a two burner Colman, and I'd love to try some recipes over the fire. We like portable lunches, so we can eat them while we hike.

My favorite camping food memory? Fresh local veggies we bought on the way up the mountain (zucchini, tomatos, onions, summer squash) grilled right over the camp fire. We brought a grill with us, but there's no reason you couldn't do them on sticks, shish kebab style. we just cut them into slices, marinated them for about 30 minutes in a little bit of olive oil and balsamic vinegar, threw them on the grill and ate them right up.
Another all time fave are camp burritos, just bring a can of refried beans, some cheese, hot sauce and tortillas. Heat up the refried beans (the fat free ones taste just as good) over your camp stove and smear them on the tortillas, then garnish with cheese and hot sauce (and whatever else you have around).
As far as on-the-trail snacks I enjoy bringing pesto, cheese, dried italian or spanish sausage, canned sardines and anchovies (really! Lots of protein abd omega-3 fatty acids) and fresh bread or crackers. Eating delicious mediterranean canapés while enjoying the sun (or shade) on my face and taking in a gorgeous view is my kind of lunch. And nuts and fruit and dark chocolate for dessert!
