So I have lots and lots of cans of canned chicken, but I can't really think of anything good to make other than a simple chicken salad. I need some ideas! Help?
You could make chicken enchiladas, chicken ala king, chicken pot pie, etc.

Canned chicken....? Does anyone else think that is unappetizing xD I heard of canned veggies but canned chicken? I don't know if I would try that. Ahah. How does it taste?
I just googled "canned chicken resipes" and found this list of 20 recipes on allrecipes.com. My vote is for the "6 can chicken tortilla soup". Sounds easy and good and relatively healthy.

It's okay in a pinch. I'll take it camping for quesadillas, and I'll sometimes add it to soup. I think it's not as good as canned tuna, but it's okay.
I'm a poor college student so I'm trying to get the most out of my stock of cheap groceries, even if it means eating not so great food. :-( But hey, at least I'm trying to cut out the $1 double cheeseburgers. ;-) Haha. I tried the canned chicken in a grilled cheese sandwich with some herbs and fat-free fake cheese and it wasn't bad! I think I would try it in more warmer recipes next time. So yay. :-)
I'm a poor college student too, but I think canned chicken sounds nasty... I'd rather spend my money on making some curries, vegetarian chilli, pastas, soups or stirfries...
I've had canned chicken, it's not bad. I think it's best in a chicken salad, chop a bit of rosemary and garlic up along with celery, onion and mayo. From what I've seen it's more expensive than chicken breast.

I keep a few cans of chicken on hand for emergency meals. It isn't too bad, although I always think it tastes like canned tuna. Must be the texture similarity.
I usually add it to some chicken broth (home-made from the freezer, but if you use canned, be sure to get low-sodium because the canned chicken is incredibly salty) along with some vegies for a quick chicken soup when I am sick. A little lemon juice and something spicy like chopped jalapenos is also a help to make it taste "fresher".
You can also substitute it in a noodle casserole (think Tuna Noodle Casserole), but that tends to be fairly high calorie.
I also make a mixture of frozen corn, chopped green onions, canned beans, salsa, a little cheese, some diced tomatoes, and the chicken and layer it in a casserole with corn tortillas for an "enchilada" casserole.
Not gourmet, but as long as you are careful with adding salt, a decent source of protein that can sit on the shelf until you need it.

i dont know how healthy this is but....
1 can of canned chicken
1 can of cream of mushroom soup or cream of chicken(or they have a can of half/half of each...which is what i use)
1 box macaroni(i prefer velveeta...tastes the best)
cook the macaroni, then mix it all together....its freaking great!!! of course like i said earlier, i dunno how healthy it is for you( i havent had it since i started dieting)...but its pretty cheap!

Interesting, I've never seen frozen chicken breast for that cheap. But the convenience of having my chicken already cooked helps too. ;-)

I like making Chicken A La King with it (I usually add a can of chicken with a can of cream of chicken soup and some veggies. Serve over a biscuit or English Muffin. Very yummy!)
As mentioned before, quessadillas are pretty good too. Some canned chicken, mexi-blend shredded cheese and some tortillas. Add some salsa and you've got a fairly decent dinner.
Soups are always good and super easy too. Or add on top of a salad or crackers. :)

Mmm those ideas sound quick, tasty, AND cheap! I'm gonna try them out! :-D
I just read another recipe where someone dumped a jar of salsa in a pot of broth. You could probably just add a can of chicken to that and end up with a yummy soup! Or even just the chicken and salsa for a good dish or wrap fill or whatever! :)

* Chicken + Olive Tapenade + Asparagus
* Chicken + Olive Oil + Mustard + Basil + Roasted Bell Peppers
* Chicken + Whole Eggs + Sauteed Onions
* Chicken + Tomato Paste + Capers + Sauteed Onions & Kale
I mix it with some salt, pepper, cumin, and pepper jack cheese (just a little sprinkle) heat it up in the microwave, then mix in some salsa. I eat it on rice cakes. So yummy!
